Ako ste ljubitelji čvaraka, moglo bi vam biti zanimljivo objašnjenje iz Hrvatske gospodarske komore (HGK) zašto ovom gastronomskom hitu osjetno raste i cijena.

Kilogram čvaraka, kažu u HGK, ne tako davno stajao je oko 50 kuna, a danas se prodaju i po 300 kuna za kilogram. Uz klasične čvarke, na policama se sve češće mogu naći i inovativni proizvodi poput namaza i snackova od čvaraka.

Navode i kako su povećanu potražnju domaće tvrtke popratile ulaganjima u proizvodnju dok predsjednik uprave karlovačkog PPK u sastavu Grupe Pivac i potpredsjednik Grupacije klaoničke industrije i prerade crvenog mesa HGK Igor Miljak pojašnjava zašto cijena čvaraka tako rapidno raste i zašto postaju sve privlačniji kupcima.

-Glavni razlog njihovoj relativno visokoj cijeni je činjenica da kvalitetan čvarak zahtijeva kvalitetnu sirovinu do koje nije lako doći. Suvremeni uzgojni trendovi preferiraju tzv. mesnate svinje čija genetika jamči više mišićnog i manje masnog tkiva. Budući da se čvarci proizvode od čvrstog masnog tkiva, to ujedno znači manje dostupne sirovine za njihovu proizvodnju - naglašava Miljak.

Nadalje, pojašnjava kako je od jedne svinje, koja u trenutku klanja u prosjeku teži od 125 do 130 kg, moguće dobiti tek tri do četiri kilograma kvalitetne masnoće za topljenje, a od te ulazne sirovine, nakon topljenja dobije se svega oko 10 posto prešanih čvaraka, odnosno oko 15 posto ukoliko se radi o neprešanim čvarcima.

-Treba napomenuti i da je cijeli proces, uz sve nužne standarde proizvodnog procesa, baziran na tradicionalnoj tehnologiji - ističe Miljak, napominjući  kako su i moderni trendovi zdrave prehrane također odigrali ulogu u popularizaciji čvaraka.

Naime, zbog značajnog udjela proteina od čak 31 grama u 100 grama proizvoda, čvarci su visokokvalitetan proizvod za sve koji paze na nutrititivnu vrijednost hrane.

Iz HGK navode kako su takav uzlet na tržištu, u PPK-u popratili i ulaganjima u proizvodnju. U sklopu velikog investicijskog ciklusa započetog prije tri godine pustili su u rad pogon za proizvodnju masti i čvaraka opremljen najsuvremenijom tehnološkom opremom, koji je u ovom trenutku među nekoliko najvećih u Europskoj uniji.

Danas na godišnjoj razini proizvode 250 tona čvaraka, dio u vlastitom brendu, a ostatak u brendovima robnih marki trgovačkih lanaca. Miljak procjenjuje da se godišnje, regularnim putem, proda između 400 i 450 tona čvaraka, a zanimljivo je da uvoza praktički nema.

-Osim plasmana na domaćem tržištu, izvozimo ih i diljem Europe, u susjednu Sloveniju i Srbiju, ali i Njemačku, Austriju, Švicarsku, Švedsku i druge zemlje Europske unije. Dio čvaraka iz našeg pogona odlazi i u pekarsku industriji gdje se dalje koristi u proizvodnji - izjavio je Miljak dodajući kako uz klasične prešane čvarke u pakiranju od 250 grama imaju i snack varijantu u vrećici od 100 grama, a rade i namaz od čvaraka koji je također naišao na odličan odaziv kupaca.

Ako ste ljubitelji čvaraka, moglo bi vam biti zanimljivo objašnjenje iz Hrvatske gospodarske komore (HGK) zašto ovom gastronomskom hitu osjetno raste i cijena.

Kilogram čvaraka, kažu u HGK, ne tako davno stajao je oko 50 kuna, a danas se prodaju i po 300 kuna za kilogram. Uz klasične čvarke, na policama se sve češće mogu naći i inovativni proizvodi poput namaza i snackova od čvaraka.

Navode i kako su povećanu potražnju domaće tvrtke popratile ulaganjima u proizvodnju dok predsjednik uprave karlovačkog PPK u sastavu Grupe Pivac i potpredsjednik Grupacije klaoničke industrije i prerade crvenog mesa HGK Igor Miljak pojašnjava zašto cijena čvaraka tako rapidno raste i zašto postaju sve privlačniji kupcima.

-Glavni razlog njihovoj relativno visokoj cijeni je činjenica da kvalitetan čvarak zahtijeva kvalitetnu sirovinu do koje nije lako doći. Suvremeni uzgojni trendovi preferiraju tzv. mesnate svinje čija genetika jamči više mišićnog i manje masnog tkiva. Budući da se čvarci proizvode od čvrstog masnog tkiva, to ujedno znači manje dostupne sirovine za njihovu proizvodnju - naglašava Miljak.

Nadalje, pojašnjava kako je od jedne svinje, koja u trenutku klanja u prosjeku teži od 125 do 130 kg, moguće dobiti tek tri do četiri kilograma kvalitetne masnoće za topljenje, a od te ulazne sirovine, nakon topljenja dobije se svega oko 10 posto prešanih čvaraka, odnosno oko 15 posto ukoliko se radi o neprešanim čvarcima.

-Treba napomenuti i da je cijeli proces, uz sve nužne standarde proizvodnog procesa, baziran na tradicionalnoj tehnologiji - ističe Miljak, napominjući  kako su i moderni trendovi zdrave prehrane također odigrali ulogu u popularizaciji čvaraka.

Naime, zbog značajnog udjela proteina od čak 31 grama u 100 grama proizvoda, čvarci su visokokvalitetan proizvod za sve koji paze na nutrititivnu vrijednost hrane.

Iz HGK navode kako su takav uzlet na tržištu, u PPK-u popratili i ulaganjima u proizvodnju. U sklopu velikog investicijskog ciklusa započetog prije tri godine pustili su u rad pogon za proizvodnju masti i čvaraka opremljen najsuvremenijom tehnološkom opremom, koji je u ovom trenutku među nekoliko najvećih u Europskoj uniji.

Danas na godišnjoj razini proizvode 250 tona čvaraka, dio u vlastitom brendu, a ostatak u brendovima robnih marki trgovačkih lanaca. Miljak procjenjuje da se godišnje, regularnim putem, proda između 400 i 450 tona čvaraka, a zanimljivo je da uvoza praktički nema.

-Osim plasmana na domaćem tržištu, izvozimo ih i diljem Europe, u susjednu Sloveniju i Srbiju, ali i Njemačku, Austriju, Švicarsku, Švedsku i druge zemlje Europske unije. Dio čvaraka iz našeg pogona odlazi i u pekarsku industriji gdje se dalje koristi u proizvodnji - izjavio je Miljak dodajući kako uz klasične prešane čvarke u pakiranju od 250 grama imaju i snack varijantu u vrećici od 100 grama, a rade i namaz od čvaraka koji je također naišao na odličan odaziv kupaca.

Ako ste ljubitelji čvaraka, moglo bi vam biti zanimljivo objašnjenje iz Hrvatske gospodarske komore (HGK) zašto ovom gastronomskom hitu osjetno raste i cijena.

Kilogram čvaraka, kažu u HGK, ne tako davno stajao je oko 50 kuna, a danas se prodaju i po 300 kuna za kilogram. Uz klasične čvarke, na policama se sve češće mogu naći i inovativni proizvodi poput namaza i snackova od čvaraka.

Navode i kako su povećanu potražnju domaće tvrtke popratile ulaganjima u proizvodnju dok predsjednik uprave karlovačkog PPK u sastavu Grupe Pivac i potpredsjednik Grupacije klaoničke industrije i prerade crvenog mesa HGK Igor Miljak pojašnjava zašto cijena čvaraka tako rapidno raste i zašto postaju sve privlačniji kupcima.
