Kulinarske i barmenske čarolije vrijednih učenika, vrhunsko gastronomsko znanje svjetski poznatih chefova, podrška visokih uzvanika i dobra atmosfera obilježili su svečano otvorenje petodnevne manifestacije ˝Dani adventa – Fit Split RCK˝ u splitskom restoranu ˝Velun˝, koju Turističko-ugostiteljska škola Split organizirala u sklopu Projekta uspostave regionalnog centra kompetentnosti u sektoru turizma i ugostiteljstva.

Cilj manifestacije je poticati održivu budućnost hrvatskog turizma temeljenu na prirodnim resursima i tradicijskim kulinarskim vrijednostima što su učenici Turističko – ugostiteljske škole Split i partnerskih škola predstavili već na samom otvorenju, a na čemu im je čestitao i župan Blaženko Boban, izrazivši ponos na njihovu spretnost i zrelost.

 

Predstavili gastronomiju srednje Dalmacije

-Svjedočimo jednom vrijednom gastronomskom događanju gdje su učenici, uz podršku profesora i mentora prezentirali naše tradicionalne kulinarske vrijednosti, naše četiri kuhinje i maestralno povezali i predstavili gastronomiju cijele srednje Dalmacije, gradova, Zagore, obale i škoja– kazao je zadovoljno župan Blaženo Boban.

Antonio Kuzmanić, zamjenik gradonačelnika grada Splita bio je također zadovoljan viđenim te je kazao kako su ovakvi tipovi manifestacija odlična prilika za mlade da pokažu što su naučili u srednjoj školi, naglasivši kako ˝stvarno imaju što pokazati˝.

-Nama u gradu Splitu trebaju kvalitetni kadrovi i mladi entuzijastični ljudi. Sve pohvale na radu i neka samo ovako nastave- dodao je.

Učenici su ove tipizirane, regionalne kuhinje predstavili u četiri, za tu prigodu oformljena restorana i to u restoranu naziva ˝Splite moj, moja lipa radosti˝ gdje je uzvanicima poslužena mesno - riblja kombinacija s neizostavnim crnim rižotom i dalmatinskom pašticadom te splitska torta; zatim u restoranu ˝Otoče, lipi moj otoče˝ koji je ponudio paletu morskih specijaliteta karakterističnih za kulinarsku tradiciju naših otoka, uz neizostavan kolač od rogača; dok je bogatstvo okusa tipične seoske kuhinje- sir i pršut, juha od raštike, arambašići i imotska torta posluženo u restoranu naziva ˝Oj Zagoro, lijepa li si˝, te pršut, sir i poljički soparnik, uz bakalar na bianco, trogirske škartocete s njokima i tradicijsku tortu od bajama i prošeka u restoranu ˝Dalmacija sva od zlata i bisera˝.

 

Simbolična priča o koktelima

U pripremi ovog gastronomskog obilja učenicima su ruke dali najpriznatiji domaći chefovi Ivica Katić i Hrvoje Zirojević. Zirojević, koji je iskustvo opisao emotivnim.

-Bilo da kuham za kraljevsku obitelj ili s učenicima jednak je osjećaj. Ulažem iste emocije, znanje, energiju i ljubav prema poslu. Mogu kazati da je emocija čak malo i jača kada kuham s djecom jer im u kratkom vremenu želim prenijeti što više znanja. Samo neka ustraju u svom poslu i jednog će dana i sami biti vrsni chefovi koji će slagati maštovite jelovnike i pripremati najbolja jela" – poručio je prigodni mentor Hrvoje Zirojević s puno optimizma.

A uz jelovnike učenici su pripremali i koktele u i to uz mentorstvo priznatog majstora Jure Vojkovića koji im je pomogao osmisliti atraktivne kombinacije okusa kojima će vjerno i originalno predstaviti stare okuse Splita i Dalmacije. Uz koktel Antique Special Split koji je Vojković posvetio svom gradu, osvojivši nedavno s njime prestižno 4. mjesto na svjetskom natjecanju barmena na Kubi, s učenicima jeza ovu prigodnu napravio još tri koktela.

-Koktel plave boje na bazi travarice i curacao likera posvetili smo otocima. Za dičnu Zagoru izmiješan je koktel zelene boje s okusom mente, a za dekoraciju stavljene crne i zelene bobice grožđa i listići mente. Ljubičastu boju koktela namijenili smo Dalmaciji s izrazitim okusom maraskina, a za dekoraciju stavili tuli, trešnju i kavijar"– objasnio je Vojković ovu simboličnu priču o koktelima.

 

Teoretsko znanje pretočeno i u praksu

Kako bi cijela priča o Dalmaciji, tradiciji i održivom turizmu bila zaokružena u svaki se restoran unio i dašak prirode za što se pobrinula floristica Fanita Vrgoč, a klapa Iskon dalmatinskim pjesmama i nadopunila.

U pretprostoru restorana održao se i izložbeni sajam autohtonih dalmatinskih namirnica, ribe, meda, pršuta i vina. Pelješki vinogradar bio je organizator vinskog dijela programa, a pozivu su se odazvali vinarija Duboković iz Jelse, Grabovac iz Prološca te Matuško s Pelješca.

-Hvala kolegama vinarima koji su pomogli da ovi mladi ljudi svoje teoretsko znanje pretoče i u praksu. Nadam se da ćemo i ubuduće zajedno sudjelovati na ovakvim manifestacija- kazao je Stanislav Štambuk.

-Učenici će tijelom manifestacije ugostiti još cijeli niz uvaženih gostiju, a posebno se vesele što će sljedeće događanje posvetiti štićenicima dječjeg doma Maestral i podružnice Miljenko i Dobrila te njihovim odgajateljima – kazala je Andrea Bilandžić, voditeljica promidžbe RCK.

Kulinarske i barmenske čarolije vrijednih učenika, vrhunsko gastronomsko znanje svjetski poznatih chefova, podrška visokih uzvanika i dobra atmosfera obilježili su svečano otvorenje petodnevne manifestacije ˝Dani adventa – Fit Split RCK˝ u splitskom restoranu ˝Velun˝, koju Turističko-ugostiteljska škola Split organizirala u sklopu Projekta uspostave regionalnog centra kompetentnosti u sektoru turizma i ugostiteljstva.

Cilj manifestacije je poticati održivu budućnost hrvatskog turizma temeljenu na prirodnim resursima i tradicijskim kulinarskim vrijednostima što su učenici Turističko – ugostiteljske škole Split i partnerskih škola predstavili već na samom otvorenju, a na čemu im je čestitao i župan Blaženko Boban, izrazivši ponos na njihovu spretnost i zrelost.

 

Predstavili gastronomiju srednje Dalmacije

-Svjedočimo jednom vrijednom gastronomskom događanju gdje su učenici, uz podršku profesora i mentora prezentirali naše tradicionalne kulinarske vrijednosti, naše četiri kuhinje i maestralno povezali i predstavili gastronomiju cijele srednje Dalmacije, gradova, Zagore, obale i škoja– kazao je zadovoljno župan Blaženo Boban.

Antonio Kuzmanić, zamjenik gradonačelnika grada Splita bio je također zadovoljan viđenim te je kazao kako su ovakvi tipovi manifestacija odlična prilika za mlade da pokažu što su naučili u srednjoj školi, naglasivši kako ˝stvarno imaju što pokazati˝.

-Nama u gradu Splitu trebaju kvalitetni kadrovi i mladi entuzijastični ljudi. Sve pohvale na radu i neka samo ovako nastave- dodao je.

Učenici su ove tipizirane, regionalne kuhinje predstavili u četiri, za tu prigodu oformljena restorana i to u restoranu naziva ˝Splite moj, moja lipa radosti˝ gdje je uzvanicima poslužena mesno - riblja kombinacija s neizostavnim crnim rižotom i dalmatinskom pašticadom te splitska torta; zatim u restoranu ˝Otoče, lipi moj otoče˝ koji je ponudio paletu morskih specijaliteta karakterističnih za kulinarsku tradiciju naših otoka, uz neizostavan kolač od rogača; dok je bogatstvo okusa tipične seoske kuhinje- sir i pršut, juha od raštike, arambašići i imotska torta posluženo u restoranu naziva ˝Oj Zagoro, lijepa li si˝, te pršut, sir i poljički soparnik, uz bakalar na bianco, trogirske škartocete s njokima i tradicijsku tortu od bajama i prošeka u restoranu ˝Dalmacija sva od zlata i bisera˝.

 

Simbolična priča o koktelima

U pripremi ovog gastronomskog obilja učenicima su ruke dali najpriznatiji domaći chefovi Ivica Katić i Hrvoje Zirojević. Zirojević, koji je iskustvo opisao emotivnim.

-Bilo da kuham za kraljevsku obitelj ili s učenicima jednak je osjećaj. Ulažem iste emocije, znanje, energiju i ljubav prema poslu. Mogu kazati da je emocija čak malo i jača kada kuham s djecom jer im u kratkom vremenu želim prenijeti što više znanja. Samo neka ustraju u svom poslu i jednog će dana i sami biti vrsni chefovi koji će slagati maštovite jelovnike i pripremati najbolja jela" – poručio je prigodni mentor Hrvoje Zirojević s puno optimizma.

A uz jelovnike učenici su pripremali i koktele u i to uz mentorstvo priznatog majstora Jure Vojkovića koji im je pomogao osmisliti atraktivne kombinacije okusa kojima će vjerno i originalno predstaviti stare okuse Splita i Dalmacije. Uz koktel Antique Special Split koji je Vojković posvetio svom gradu, osvojivši nedavno s njime prestižno 4. mjesto na svjetskom natjecanju barmena na Kubi, s učenicima jeza ovu prigodnu napravio još tri koktela.

-Koktel plave boje na bazi travarice i curacao likera posvetili smo otocima. Za dičnu Zagoru izmiješan je koktel zelene boje s okusom mente, a za dekoraciju stavljene crne i zelene bobice grožđa i listići mente. Ljubičastu boju koktela namijenili smo Dalmaciji s izrazitim okusom maraskina, a za dekoraciju stavili tuli, trešnju i kavijar"– objasnio je Vojković ovu simboličnu priču o koktelima.

 

Teoretsko znanje pretočeno i u praksu

Kako bi cijela priča o Dalmaciji, tradiciji i održivom turizmu bila zaokružena u svaki se restoran unio i dašak prirode za što se pobrinula floristica Fanita Vrgoč, a klapa Iskon dalmatinskim pjesmama i nadopunila.

U pretprostoru restorana održao se i izložbeni sajam autohtonih dalmatinskih namirnica, ribe, meda, pršuta i vina. Pelješki vinogradar bio je organizator vinskog dijela programa, a pozivu su se odazvali vinarija Duboković iz Jelse, Grabovac iz Prološca te Matuško s Pelješca.

-Hvala kolegama vinarima koji su pomogli da ovi mladi ljudi svoje teoretsko znanje pretoče i u praksu. Nadam se da ćemo i ubuduće zajedno sudjelovati na ovakvim manifestacija- kazao je Stanislav Štambuk.

-Učenici će tijelom manifestacije ugostiti još cijeli niz uvaženih gostiju, a posebno se vesele što će sljedeće događanje posvetiti štićenicima dječjeg doma Maestral i podružnice Miljenko i Dobrila te njihovim odgajateljima – kazala je Andrea Bilandžić, voditeljica promidžbe RCK.
