Sve do prije par godina, kolače s mrkvom na našim su prostorima pekli samo oni kojima su standardni sastojci za slastice zabranjeni i čudaci. No to s pomalo promijenilo, vjerojatno ponajprije zahvaljujući društvenim mrežama, ali i svijesti o tome da slastice sa zdravim sastojcima mogu biti itekako ukusne pa su kolači s tim korjenastim povrćem postali nešto sasvim uobičajeno.
A osobito su nam dragi u vremenu ususret Uskrsu. Razlog je jednostavan, mrkve bude asocijalice na zečeve, jedan od simbola tog blagdana (premda je zec zapravo jedan od simbola božice plodnosti Eostre, ali ‘ajde dobro). No znate li zašto su se mrkve uopće počele stavljati u kolače?

Razlog datira iz vremena Drugog svjetskog rata, a potječe iz Velike Britanije. Tamošnje su vlasti naime, u spomenuto vrijeme, uslijed nestašica hrane poticale stanovništvo da se baci na uzgoj hrane. Čak su i žitelji gradova - koji su to mogli s obzirom na stambene prilike - uzgajali povrće, a kako je mrkva slatkasta i dobro se ponaša u tijestu, počela se popularizirati ideja o njenom dodavanju u kolače, kako bi se doskočilo nedostatku brašna i šećera.
Dodate li mrkvu u kolač, osigurat ćete mu sočnost, jer mrkva, zahvaljujući obilju vlakana dobro čuva vlažnost, a ujedno ćete moći bez brige smanjiti količinu šećera jer mrkve su prirodno slatkaste.

Torta od mrkve
Sastojci:
Za biskvite:
250 g glatkog brašna
250 g šećera
300 g mrkve
300 ml biljnog ulja
5 jaja
2 žličice sode bikarbone
pola žličice muškatnog oraščića
1 žličica cimeta
pola žličice soli
Za kremu:
500 g kreme za cheesecake
200 ml mliječnog vrhnja za šlag
4 žlice šećera u prahu
sok jedne naranče
1 vrećica mljevene želatine
Priprema:
Mrkvu ogulite i sitno naribajte.
U posebnoj zdjeli promiješajte suhe sastojke: brašno, sol, sodu bikarbonu, cimet i muškatni oraščić.
Pjenjačom dobro promiješajte ulje i šećer pa dodajte jedno po jedno jaje i nakon svakog promiješajte. U smjesu dodajte dio po dio suhih sastojaka uz lagano miješanje. Na kraju umiješajte i mrkvu.
Pripremite dva kalupa promjera 24 cm, premažite ih maslacem i obložite masnim papirom. U svaki izlijte pola smjese. Pecite svaki biskvit oko 35 minuta na 175 stupnjeva. Testirajte čačkalicom jesu li pečeni pa po potrebi pecite koju minutu duže (ne više, jer će se osušiti i neće biti sočni). Biskvite ohladite na sobnoj temperaturi.
Za kremu mikserom umutite hladno vrhnje u šlag.
Posebno umutite šećer, kremu i sok naranče. Želatinu pripremite po uputama s vrećice. Želatinu umiješajte u smjesu s kremom. Na kraju špatulom lagano umiješajte šlag dok se svi sastojci lijepo ne spoje.
Donji biskvit premažite s malo više od pola kreme, složite gornji biskvit i premažite ostatkom kreme. Ohladite preko noći u frižideru ili na hladnijem mjestu. Po želji ukrasite sjeckanim lješnjacima.

Sve do prije par godina, kolače s mrkvom na našim su prostorima pekli samo oni kojima su standardni sastojci za slastice zabranjeni i čudaci. No to s pomalo promijenilo, vjerojatno ponajprije zahvaljujući društvenim mrežama, ali i svijesti o tome da slastice sa zdravim sastojcima mogu biti itekako ukusne pa su kolači s tim korjenastim povrćem postali nešto sasvim uobičajeno.
A osobito su nam dragi u vremenu ususret Uskrsu. Razlog je jednostavan, mrkve bude asocijalice na zečeve, jedan od simbola tog blagdana (premda je zec zapravo jedan od simbola božice plodnosti Eostre, ali ‘ajde dobro). No znate li zašto su se mrkve uopće počele stavljati u kolače?

Razlog datira iz vremena Drugog svjetskog rata, a potječe iz Velike Britanije. Tamošnje su vlasti naime, u spomenuto vrijeme, uslijed nestašica hrane poticale stanovništvo da se baci na uzgoj hrane. Čak su i žitelji gradova - koji su to mogli s obzirom na stambene prilike - uzgajali povrće, a kako je mrkva slatkasta i dobro se ponaša u tijestu, počela se popularizirati ideja o njenom dodavanju u kolače, kako bi se doskočilo nedostatku brašna i šećera.
Dodate li mrkvu u kolač, osigurat ćete mu sočnost, jer mrkva, zahvaljujući obilju vlakana dobro čuva vlažnost, a ujedno ćete moći bez brige smanjiti količinu šećera jer mrkve su prirodno slatkaste.

Torta od mrkve
Sastojci:
Za biskvite:
250 g glatkog brašna
250 g šećera
300 g mrkve
300 ml biljnog ulja
5 jaja
2 žličice sode bikarbone
pola žličice muškatnog oraščića
1 žličica cimeta
pola žličice soli
Za kremu:
500 g kreme za cheesecake
200 ml mliječnog vrhnja za šlag
4 žlice šećera u prahu
sok jedne naranče
1 vrećica mljevene želatine
Priprema:
Mrkvu ogulite i sitno naribajte.
U posebnoj zdjeli promiješajte suhe sastojke: brašno, sol, sodu bikarbonu, cimet i muškatni oraščić.
Pjenjačom dobro promiješajte ulje i šećer pa dodajte jedno po jedno jaje i nakon svakog promiješajte. U smjesu dodajte dio po dio suhih sastojaka uz lagano miješanje. Na kraju umiješajte i mrkvu.
Pripremite dva kalupa promjera 24 cm, premažite ih maslacem i obložite masnim papirom. U svaki izlijte pola smjese. Pecite svaki biskvit oko 35 minuta na 175 stupnjeva. Testirajte čačkalicom jesu li pečeni pa po potrebi pecite koju minutu duže (ne više, jer će se osušiti i neće biti sočni). Biskvite ohladite na sobnoj temperaturi.
Za kremu mikserom umutite hladno vrhnje u šlag.
Posebno umutite šećer, kremu i sok naranče. Želatinu pripremite po uputama s vrećice. Želatinu umiješajte u smjesu s kremom. Na kraju špatulom lagano umiješajte šlag dok se svi sastojci lijepo ne spoje.
Donji biskvit premažite s malo više od pola kreme, složite gornji biskvit i premažite ostatkom kreme. Ohladite preko noći u frižideru ili na hladnijem mjestu. Po želji ukrasite sjeckanim lješnjacima.
