Ako ste ljubitelj topljenog sira za mazanje - mislimo na onaj u trokutićima, od kojih je najpoznatiji Zdenka sir - mogao bi vas razveseliti podatak da ga i sami možete napraviti u kućnoj radinosti - bez umjetnih dodataka i kontroverznih E brojeva. Izgledat će isto kao onaj iz trgovine i lijepo će se mazati, baš kako volite.

Domaći topljeni sir možete pripremiti na dva načina. Lakši i teži. Lakši je zaista dječja igra i bit će vam potrebni samo maslac i sasvim običan svježi sir u omjerima 1:10. Dodat ćete ispasirani svježi sir u otopljeni maslac pa ćete ih kuhati na laganoj vatri dok s mjesa ne postane glatka, a zatim prebaciti u kalup i pustiti da se ohladi.

Drugi je način nešto teži, ali rezultat, kako ćete se uvjeriti kad pogledate priloženi video, izgleda skoro potpuno isto kao i topljeni sir iz trgovine. Trebat će vam 1 litra mlijeka, 50 g maslaca, 1 kiselo vrhnje, 50 mililitara alkoholnog octa, 1 žličica sode bikarbone, 1 žličica limunske kiseline i 1 žličica soli. Trebat će vam i 100 g nekog sira poput gaude, ali ako se želite poigrati okusima slobodno koristite cheddar, ementaler, dimljeni sir, sireve s plijesni ili neki drugi koji vam se jako sviđa, samo neka bude nešto masniji.

Mlijeko se zagrije do 50-ak stupnjeva, dodajte mu alkoholni ocat te nekoliko minuta miješajte bez prestanka dok se ne odvoji sir od mlaćenice. Ugasite vatru i pričekajte dok mlaćenica ne postane sasvim bistra pa sve procijedite (mlaćenicu svakako sačuvajte, jako je zdrava, kao što smo vam već pisali).

Jasno, sve ovo možete preskočiti ako se odlučite koristiti svježi sir. Kako god napravili, svježi sir na kraju ubacite u blender, dodajte mu maslac i kiselo vrhnje. Blendajte dok ne postane glatko.

Odvojeno pomiješajte liminsku kiselinu s dvije žlice vode, dobro razmutite pa dodajte sodu bikarbonu. Nastat će reakcija i smjesa će se zapjeniti, a vi samo trebate pričekati 5-6 minuta da postane prozirna. Dobit ćete natrij citrat koji se koristi kao regulator kiselosti i kao konzervans.

Okej, na početku smo spomenuli da će vaš domaći topljeni sir biti bez umjetnih dodataka, no vjerujemo da bi se ovaj spoj mogao provući ispod radara, jer je prepoznat kao siguran (osim ako se u većoj količini udišu plinovi koji se oslobađaju pri reakciji sode i kiseline) te se koristi čak i u ekološkoj proizvodnji hrane.

Dakle, natrijev citrat dodat ćete u smjesu sira i vrhnja te još malo blendati. Primijetit ćete kako se smjesa zgusnula i postala lahano rastezljiva. Sve što još trebate napraviti je prebaciti je u neprijanjajuću tavu, dodati joj nasjeckani sir te sol i sve zagrijavati na umjerenoj vatri uz miješanje. Gotovo je kad se smjesa počne odvajati od dna i stijenki tave, a za to će trebati 15-ak minuta kuhanja.

U međuvremenu pripremite kalupiće po želji, namastite ih otopljenim maslacem ili ih obložite komadom folije dovoljno velikim da se komadić sira može zamotati nakon što se stisne.

Ako ste ljubitelj topljenog sira za mazanje - mislimo na onaj u trokutićima, od kojih je najpoznatiji Zdenka sir - mogao bi vas razveseliti podatak da ga i sami možete napraviti u kućnoj radinosti - bez umjetnih dodataka i kontroverznih E brojeva. Izgledat će isto kao onaj iz trgovine i lijepo će se mazati, baš kako volite.

Domaći topljeni sir možete pripremiti na dva načina. Lakši i teži. Lakši je zaista dječja igra i bit će vam potrebni samo maslac i sasvim običan svježi sir u omjerima 1:10. Dodat ćete ispasirani svježi sir u otopljeni maslac pa ćete ih kuhati na laganoj vatri dok s mjesa ne postane glatka, a zatim prebaciti u kalup i pustiti da se ohladi.

Drugi je način nešto teži, ali rezultat, kako ćete se uvjeriti kad pogledate priloženi video, izgleda skoro potpuno isto kao i topljeni sir iz trgovine. Trebat će vam 1 litra mlijeka, 50 g maslaca, 1 kiselo vrhnje, 50 mililitara alkoholnog octa, 1 žličica sode bikarbone, 1 žličica limunske kiseline i 1 žličica soli. Trebat će vam i 100 g nekog sira poput gaude, ali ako se želite poigrati okusima slobodno koristite cheddar, ementaler, dimljeni sir, sireve s plijesni ili neki drugi koji vam se jako sviđa, samo neka bude nešto masniji.

Mlijeko se zagrije do 50-ak stupnjeva, dodajte mu alkoholni ocat te nekoliko minuta miješajte bez prestanka dok se ne odvoji sir od mlaćenice. Ugasite vatru i pričekajte dok mlaćenica ne postane sasvim bistra pa sve procijedite (mlaćenicu svakako sačuvajte, jako je zdrava, kao što smo vam već pisali).

Jasno, sve ovo možete preskočiti ako se odlučite koristiti svježi sir. Kako god napravili, svježi sir na kraju ubacite u blender, dodajte mu maslac i kiselo vrhnje. Blendajte dok ne postane glatko.

Odvojeno pomiješajte liminsku kiselinu s dvije žlice vode, dobro razmutite pa dodajte sodu bikarbonu. Nastat će reakcija i smjesa će se zapjeniti, a vi samo trebate pričekati 5-6 minuta da postane prozirna. Dobit ćete natrij citrat koji se koristi kao regulator kiselosti i kao konzervans.

Okej, na početku smo spomenuli da će vaš domaći topljeni sir biti bez umjetnih dodataka, no vjerujemo da bi se ovaj spoj mogao provući ispod radara, jer je prepoznat kao siguran (osim ako se u većoj količini udišu plinovi koji se oslobađaju pri reakciji sode i kiseline) te se koristi čak i u ekološkoj proizvodnji hrane.

Dakle, natrijev citrat dodat ćete u smjesu sira i vrhnja te još malo blendati. Primijetit ćete kako se smjesa zgusnula i postala lahano rastezljiva. Sve što još trebate napraviti je prebaciti je u neprijanjajuću tavu, dodati joj nasjeckani sir te sol i sve zagrijavati na umjerenoj vatri uz miješanje. Gotovo je kad se smjesa počne odvajati od dna i stijenki tave, a za to će trebati 15-ak minuta kuhanja.

U međuvremenu pripremite kalupiće po želji, namastite ih otopljenim maslacem ili ih obložite komadom folije dovoljno velikim da se komadić sira može zamotati nakon što se stisne.
