Sjećate li se kako su izgledali restoranski jelovnici prije nekih 15-20 i više godina? Za prelistati cijeli trebalo vam je ponešto truda i vremena, a svi su nudili manje više vrlo slična jela. Ako je restoran u ponudi imao predjela, tada ste mogli biti sigurni da će među njima biti plata sira i pršuta te poslovična salata od hobotnice, a vrlo često se uz njih nudilo još jedno jelo koje je, za razliku od spomenutih, s godinama nestalo s menija.
Koktel od škampi. Sjećate li ga se još? Nama je to jelo palo napamet dok smo se pokušavali domisliti što pripremiti za ovaj vrlo specifičan Dan zaljubljenih. Jer, možda ste primijetili, ove su se godine poklopili Valentinovo i Čista srida. Kako ih uskladiti, a ne uskratiti si gurmanski užitak? Jednostavno, s jelima poput ovog, a ni gore navedena salata od hobe ne bi bila na odmet.
No vratimo se koktelu od škampi. Za one mlađe kojima nije poznat evo odmah objašnjenja: nije riječ o alkoholnom piću. Ni bezalkoholnom. Zove se koktel jer ga se tako nazivalo u originalu - shrimp cocktail ili prawn cocktail poznato je jelo koje smo uvezli iz američke kuhinje i zavoljeli.

Izmišljeno je još negdje koncem 19. stoljeća, da bi uzlet popularnosti - i način serviranja u koktelskoj čaši - doživjeo u doba prohibicije. Novu je slavu steklo tijekom 1950-ih u Las Vegasu, gdje se posluživalo u tamošnjim poznatim kockarnicama kao jedan od simbola dostižnog glamura, a negdje 1960-ih je postalo popularno u Velikoj Britaniji i ostatku Europe, a zatim svijeta.
Postoji nekoliko načina njegove pripreme, ali svi uključuju repiće škampa ili kozica i koktelske čaše. Najpoznatiji recepti podrazumijevaju dobro začinjen umak od rajčice, u koji se umaču cijelirepići prije nego se u njih zagrize, no kod nas je bila popularna jedna druga varijanta ovog jela.
Klasični koktel od škampa iz ovdašnjih restorana pravio se od nasjeckanih repića škampa pomiješanih s umakom na bazi majoneze, a kao dekoracija se često koristio list zelene salate. Pronašli smo jedan dobar recept koji nas neodoljivo podsjeća na one kakve smo nekoć svi jeli pa ćemo vas malo podsjetiti, a možda i nagovoriti da ga napravite.

Koktel od škampa
Sastojci:
250 g očišćenih repića velikih škampa
110 g majoneze
1 žlica kečapa
1/2 žlice senfa
1/2 žlice Worcestershire umaka
1/2 čašice konjaka
salata za dekoraciju
ružičasti papar
Priprema:
Repiće blanširajte nekoliko minuta u kipućoj vodi. Čim poprime blago ružičastu boju, izvadite ih i dobro ocijedite.
Pomiješajte majonezu, kečap i senf, dodajte Worcestershire umak i konjak pa miješajte dok ne dobijete glatki umak.
Odaberite malene listove zelene salate, operite ih, osušite i rasporedite u čaše.
Škampe pomiješajte s umakom i posložite ih po salati.
Koktele pospite grubo mljevenim ružičastim paprom i ostavite u hladnjaku do posluživanja.

Sjećate li se kako su izgledali restoranski jelovnici prije nekih 15-20 i više godina? Za prelistati cijeli trebalo vam je ponešto truda i vremena, a svi su nudili manje više vrlo slična jela. Ako je restoran u ponudi imao predjela, tada ste mogli biti sigurni da će među njima biti plata sira i pršuta te poslovična salata od hobotnice, a vrlo često se uz njih nudilo još jedno jelo koje je, za razliku od spomenutih, s godinama nestalo s menija.
Koktel od škampi. Sjećate li ga se još? Nama je to jelo palo napamet dok smo se pokušavali domisliti što pripremiti za ovaj vrlo specifičan Dan zaljubljenih. Jer, možda ste primijetili, ove su se godine poklopili Valentinovo i Čista srida. Kako ih uskladiti, a ne uskratiti si gurmanski užitak? Jednostavno, s jelima poput ovog, a ni gore navedena salata od hobe ne bi bila na odmet.
No vratimo se koktelu od škampi. Za one mlađe kojima nije poznat evo odmah objašnjenja: nije riječ o alkoholnom piću. Ni bezalkoholnom. Zove se koktel jer ga se tako nazivalo u originalu - shrimp cocktail ili prawn cocktail poznato je jelo koje smo uvezli iz američke kuhinje i zavoljeli.

Izmišljeno je još negdje koncem 19. stoljeća, da bi uzlet popularnosti - i način serviranja u koktelskoj čaši - doživjeo u doba prohibicije. Novu je slavu steklo tijekom 1950-ih u Las Vegasu, gdje se posluživalo u tamošnjim poznatim kockarnicama kao jedan od simbola dostižnog glamura, a negdje 1960-ih je postalo popularno u Velikoj Britaniji i ostatku Europe, a zatim svijeta.
Postoji nekoliko načina njegove pripreme, ali svi uključuju repiće škampa ili kozica i koktelske čaše. Najpoznatiji recepti podrazumijevaju dobro začinjen umak od rajčice, u koji se umaču cijelirepići prije nego se u njih zagrize, no kod nas je bila popularna jedna druga varijanta ovog jela.
Klasični koktel od škampa iz ovdašnjih restorana pravio se od nasjeckanih repića škampa pomiješanih s umakom na bazi majoneze, a kao dekoracija se često koristio list zelene salate. Pronašli smo jedan dobar recept koji nas neodoljivo podsjeća na one kakve smo nekoć svi jeli pa ćemo vas malo podsjetiti, a možda i nagovoriti da ga napravite.

Koktel od škampa
Sastojci:
250 g očišćenih repića velikih škampa
110 g majoneze
1 žlica kečapa
1/2 žlice senfa
1/2 žlice Worcestershire umaka
1/2 čašice konjaka
salata za dekoraciju
ružičasti papar
Priprema:
Repiće blanširajte nekoliko minuta u kipućoj vodi. Čim poprime blago ružičastu boju, izvadite ih i dobro ocijedite.
Pomiješajte majonezu, kečap i senf, dodajte Worcestershire umak i konjak pa miješajte dok ne dobijete glatki umak.
Odaberite malene listove zelene salate, operite ih, osušite i rasporedite u čaše.
Škampe pomiješajte s umakom i posložite ih po salati.
Koktele pospite grubo mljevenim ružičastim paprom i ostavite u hladnjaku do posluživanja.
