U potrazi za novim načinima pripreme hrane ponekad je dovoljno pogledati - unatrag. Kad vam je više dosta svega što kuhate iz dana u dan, umjesto da ideje tražite u tuđim gastronomskim tradicijama, potražite ih u našoj, o kojoj svi volimo misliti da nam je dobro poznata, no to baš nije istina.

Evo naprimjer, jeste li znali da se izvrsna riblja jela mogu pripremiti uz dodatak grožđa? Svježeg. I crnog i bijelog, da vam odmah odgovorimo na sva pitanja.

Na taj se način, koji nam danas zvuči vrlo egzotično pa je lako pomisliti da je uvezen tko zna od kuda, u Dalmaciji kuhalo od davnina, a običaj se zadržao tek na Pelješcu i nekim otocima.

No zašto ga ne bismo vratili? Tko god je probao jela koja kombiniraju ribu i grožđe posvjedočit će vam da je riječ o jako dobrom spoju, uostalom, u kulinarstvu je jako dobro poznato jelo sole Véronique, koje je 1904. godine izumio slavni kuhar Auguste Escoffier u slavu operete Andréa Messagera, Véronique.

Kako je grožđe slatko, u receptima koji ga kombiniraju s ribom obavezno je i kiselkasta komponenta poput dobre domaće kvasine, soka od limuna (domaćih, dakako) ili rajčice pa je sve na što treba paziti da bi takva jela dobro uspjela upravo taj balans između slatkog i kiselog. Zgodno je što ga svatko može prilagoditi svome ukusu.

Izdvajamo nekoliko recepata da vam se nađu pri ruci odvažite li se provjeriti kako se ljube riba i grožđe.

Brodet od gera i grozja

Sastojci:

500 g girica
300 g crnog grožđa
100 ml maslinova ulja
100 dcl vinskog octa
2 luka
2 češnja češnjaka
1 žlica koncentrata rajčice
1 žlica nasjeckanog peršina
malo šećera po potrebi
soli, papar

Priprema:

Na maslinovom ulju prodinstajte usitnjeni luk, a kad luk dobije boju dodajte i češnjak. Kratko pirjajte uz miješanje pa zalijte octom i dodajte ribu, očišćenu i bez glave, koncentrat rajčice i grožđe. Poklopite i kuhajte na laganoj vatri oko sat vremena uz povremeno dodavanje vode. Petnaestak minuta pred kraj kuhanja dodajte i peršin.

Na kraju provjerite okus, po potrebi dodajte malo šećera ako je previše kiselo ili pak još malo octa ili soka od limuna ako je preslatko.

Sardele s grozjem

Sastojci:

1 kg srdela
100 g bijelog grožđa
100 ml bijelog vina
50 ml maslinovog ulja
2 luka
1 žlica nasjeckanog peršina
1 žličica soka od limuna
1 grančica ružmarina 
malo brašna
ulje za prženje
sol, papar

Priprema:

Očistite srdele, uvaljajte ih u brašno i ispržite.

Na zagrijanom maslinovom ulju prodinstajte lisnato narezan luk, kad uhvati boju dodajte mu grančicu ružmarina i zalijte ga vinom pa kratko kuhajte. Dodajte prepolovljena zrna grožđa, limunov sok, peršin, sol i papar pa kratko prokuhajte.

Na dno posude u kojojn ćete čuvati jelo stavite smjesu s grožđem, na to stavite jedan red srdela pa ih prekrijte novim slojem smjese s grožđem. Redajte dok ne potrošite pa pospremite u hladnjak na par sati ili preko noći.

Cipli s grožđem

Sastojci:

50 g grožđa
4 režnja češnjaka
2 cipla
2 luka
2 rajčice
maslinovo ulje
sol, papar

Priprema:

Sitno nasjeckajte luk pa ga prodinstajte na maslinovom ulju. Kad postane staklast, dodajte mu usitnjeni češnjak i pirjajte dok zamiriše. Zatim dodajte oguljene i narezane rajčice pa pirjajte 10-ak minuta na srednje jakoj vatri.

Dodajte zrna grožđa prerezana na popola i očišćena od koštica pa pirjajte još 10-ak minuta. Na kraju dodajte očeišćene i grubo narezane ciple te malo vode po potrebi (ne smije potpuno prekriti ribu). Posolite, popaprite pa kuhajte poklopljeno još 10-ak minuta.

U potrazi za novim načinima pripreme hrane ponekad je dovoljno pogledati - unatrag. Kad vam je više dosta svega što kuhate iz dana u dan, umjesto da ideje tražite u tuđim gastronomskim tradicijama, potražite ih u našoj, o kojoj svi volimo misliti da nam je dobro poznata, no to baš nije istina.

Evo naprimjer, jeste li znali da se izvrsna riblja jela mogu pripremiti uz dodatak grožđa? Svježeg. I crnog i bijelog, da vam odmah odgovorimo na sva pitanja.

Na taj se način, koji nam danas zvuči vrlo egzotično pa je lako pomisliti da je uvezen tko zna od kuda, u Dalmaciji kuhalo od davnina, a običaj se zadržao tek na Pelješcu i nekim otocima.

No zašto ga ne bismo vratili? Tko god je probao jela koja kombiniraju ribu i grožđe posvjedočit će vam da je riječ o jako dobrom spoju, uostalom, u kulinarstvu je jako dobro poznato jelo sole Véronique, koje je 1904. godine izumio slavni kuhar Auguste Escoffier u slavu operete Andréa Messagera, Véronique.

Kako je grožđe slatko, u receptima koji ga kombiniraju s ribom obavezno je i kiselkasta komponenta poput dobre domaće kvasine, soka od limuna (domaćih, dakako) ili rajčice pa je sve na što treba paziti da bi takva jela dobro uspjela upravo taj balans između slatkog i kiselog. Zgodno je što ga svatko može prilagoditi svome ukusu.

Izdvajamo nekoliko recepata da vam se nađu pri ruci odvažite li se provjeriti kako se ljube riba i grožđe.

Brodet od gera i grozja

Sastojci:

500 g girica
300 g crnog grožđa
100 ml maslinova ulja
100 dcl vinskog octa
2 luka
2 češnja češnjaka
1 žlica koncentrata rajčice
1 žlica nasjeckanog peršina
malo šećera po potrebi
soli, papar

Priprema:

Na maslinovom ulju prodinstajte usitnjeni luk, a kad luk dobije boju dodajte i češnjak. Kratko pirjajte uz miješanje pa zalijte octom i dodajte ribu, očišćenu i bez glave, koncentrat rajčice i grožđe. Poklopite i kuhajte na laganoj vatri oko sat vremena uz povremeno dodavanje vode. Petnaestak minuta pred kraj kuhanja dodajte i peršin.

Na kraju provjerite okus, po potrebi dodajte malo šećera ako je previše kiselo ili pak još malo octa ili soka od limuna ako je preslatko.

Sardele s grozjem

Sastojci:

1 kg srdela
100 g bijelog grožđa
100 ml bijelog vina
50 ml maslinovog ulja
2 luka
1 žlica nasjeckanog peršina
1 žličica soka od limuna
1 grančica ružmarina 
malo brašna
ulje za prženje
sol, papar

Priprema:

Očistite srdele, uvaljajte ih u brašno i ispržite.

Na zagrijanom maslinovom ulju prodinstajte lisnato narezan luk, kad uhvati boju dodajte mu grančicu ružmarina i zalijte ga vinom pa kratko kuhajte. Dodajte prepolovljena zrna grožđa, limunov sok, peršin, sol i papar pa kratko prokuhajte.

Na dno posude u kojojn ćete čuvati jelo stavite smjesu s grožđem, na to stavite jedan red srdela pa ih prekrijte novim slojem smjese s grožđem. Redajte dok ne potrošite pa pospremite u hladnjak na par sati ili preko noći.

Cipli s grožđem

Sastojci:

50 g grožđa
4 režnja češnjaka
2 cipla
2 luka
2 rajčice
maslinovo ulje
sol, papar

Priprema:

Sitno nasjeckajte luk pa ga prodinstajte na maslinovom ulju. Kad postane staklast, dodajte mu usitnjeni češnjak i pirjajte dok zamiriše. Zatim dodajte oguljene i narezane rajčice pa pirjajte 10-ak minuta na srednje jakoj vatri.

Dodajte zrna grožđa prerezana na popola i očišćena od koštica pa pirjajte još 10-ak minuta. Na kraju dodajte očeišćene i grubo narezane ciple te malo vode po potrebi (ne smije potpuno prekriti ribu). Posolite, popaprite pa kuhajte poklopljeno još 10-ak minuta.
