Premda se koristi već tisućama godina i jedna je od najstarijih vrsta riže, kao i na cijeni kao jedna od najzdravijih, malo je tko u Hrvatskoj do prije nekoliko godina kuhao jela s basmati rižom. Oni upućeniji u trendove zdrave prehrane nabavljali su je u trgovinama zdravom hranom, dok su prosječni potrošači živjeli - i kuhali - u neznanju. Srećom, počeli smo je sve češće viđati na policama običnih samoposluga, a osvojila nas je visokim nutritivnim sastavom i osobitim svojstvom: sadrži manje škroba pa kako god je pripremali, ostaje fino rastresita, što je vrlo važno za pripremu određenih jela.
No mislite li da jedete zdravije od drugih ako umjesto uobičajenih vrsta riže koristite basmati, velika je mogućnost da se ljuto varate. Monia Caramma autorica knjige “Istinu, molim, o hrani” objavila je video na TikToku u kojem iznosi poprilično zabrinjavajuće podatke.

Caramma upozorava kako basmati riža dugo putuje do kupaca u Europi i Americi jer raste na području Indije, Pakistana i susjednih zemalja, a transport se odvija u brodskim kontejnerima, kojima treba i do mjesec dana da pristignu do europskih luka, pri čemu je pakirana u ogromnim vrećama od čak jedne tone.
Kako bi izdržala tako dug put u nepovoljnim uvjetima i odoljela insektima i plijesni, neizbježna je njena zaštita kemisjkim sredstvima. Caramma ne navodi dokaze za svoje tvrdnje, ali njene špekulacije zvuče dosta zabrinjavajuće jer spominje mogućnost korištenja pesticida i sterilizirajućih tvari nedopuštenih u Europi. Proizvođačima i uvoznicima taj detalj nije problematičan, zbog svojevrsne rupe u propisima: premda su u EU neki pesticidi ili druge tvari zabranjeni, uvoz proizvoda koji ih sadrže je dopušten.

Nakon što nam je skrenula pažnju na sve ovo, teško se ne zapitati bismo li trebali basmati rižu početi izbjegavati ili barem početi je kupovati isključivo u trgovinama koje nam mogu jamčiti da je organska. A kad vam takve trgovine nisu "usput", što činiti? Caramma nudi alternativu: kupiti neku drugu vrstu riže dugog zrna, a koja ima isti relativno niski glikemijski indeks i isti sadržaj škroba pa se u jelima ponaša slično riži sorte basmati.
Talijanske dugozrnate sorte koje na tržište dolaze pod nazivima Arborio, Baldo, Balilla i Carnaroli sasvim će lijepo oponašati basmati, a može ih se pronaći i u integralnoj varijanti, koja uvijek ima niži glikemijski indeks od bijele. Basmati se uspješno može zamijeniti i popularnom jasmin rižom. Imajte na umu da se pri korištenju različitih vrsta riže od one navedene u receptu vrijeme kuhanja može ponešto razlikovati pa češće provjeravajte stupanj skuhanosti.

Premda se koristi već tisućama godina i jedna je od najstarijih vrsta riže, kao i na cijeni kao jedna od najzdravijih, malo je tko u Hrvatskoj do prije nekoliko godina kuhao jela s basmati rižom. Oni upućeniji u trendove zdrave prehrane nabavljali su je u trgovinama zdravom hranom, dok su prosječni potrošači živjeli - i kuhali - u neznanju. Srećom, počeli smo je sve češće viđati na policama običnih samoposluga, a osvojila nas je visokim nutritivnim sastavom i osobitim svojstvom: sadrži manje škroba pa kako god je pripremali, ostaje fino rastresita, što je vrlo važno za pripremu određenih jela.
No mislite li da jedete zdravije od drugih ako umjesto uobičajenih vrsta riže koristite basmati, velika je mogućnost da se ljuto varate. Monia Caramma autorica knjige “Istinu, molim, o hrani” objavila je video na TikToku u kojem iznosi poprilično zabrinjavajuće podatke.

Caramma upozorava kako basmati riža dugo putuje do kupaca u Europi i Americi jer raste na području Indije, Pakistana i susjednih zemalja, a transport se odvija u brodskim kontejnerima, kojima treba i do mjesec dana da pristignu do europskih luka, pri čemu je pakirana u ogromnim vrećama od čak jedne tone.
Kako bi izdržala tako dug put u nepovoljnim uvjetima i odoljela insektima i plijesni, neizbježna je njena zaštita kemisjkim sredstvima. Caramma ne navodi dokaze za svoje tvrdnje, ali njene špekulacije zvuče dosta zabrinjavajuće jer spominje mogućnost korištenja pesticida i sterilizirajućih tvari nedopuštenih u Europi. Proizvođačima i uvoznicima taj detalj nije problematičan, zbog svojevrsne rupe u propisima: premda su u EU neki pesticidi ili druge tvari zabranjeni, uvoz proizvoda koji ih sadrže je dopušten.

Nakon što nam je skrenula pažnju na sve ovo, teško se ne zapitati bismo li trebali basmati rižu početi izbjegavati ili barem početi je kupovati isključivo u trgovinama koje nam mogu jamčiti da je organska. A kad vam takve trgovine nisu "usput", što činiti? Caramma nudi alternativu: kupiti neku drugu vrstu riže dugog zrna, a koja ima isti relativno niski glikemijski indeks i isti sadržaj škroba pa se u jelima ponaša slično riži sorte basmati.
Talijanske dugozrnate sorte koje na tržište dolaze pod nazivima Arborio, Baldo, Balilla i Carnaroli sasvim će lijepo oponašati basmati, a može ih se pronaći i u integralnoj varijanti, koja uvijek ima niži glikemijski indeks od bijele. Basmati se uspješno može zamijeniti i popularnom jasmin rižom. Imajte na umu da se pri korištenju različitih vrsta riže od one navedene u receptu vrijeme kuhanja može ponešto razlikovati pa češće provjeravajte stupanj skuhanosti.
