Nekada davno, dok je potpisnica ovih redaka bila dijete, sirnice su se mogle kupiti samo u vrijeme od Uskrsa. I to svega par dana ranije. Zaželjeli bismo ih se silno tijekom godine, pa kad bi stigle na police Bobisa – mame su morale po njih. Odmah. Hitno. Žurno.
I onda doma – ritual otvaranja vrećice. Tko će prvi, sestra ili ja.
A kad se vrećica otvori. Taj miris... Ne da se to prenijeti na papir!
Tako, vjerujem, miriše djetinjstvo.
Ureže se u receptore, ne da se izbaciti iz sistema, zauvijek je tu.
Razgovarali smo s onima koji određuju recepturu za Bobisove sirnice (odmah su vam draži, je l' tako?), i doznajemo kako je balans ono što je u procesu izrade sirnica bitno. Uz, to je svima jasno, namirnice koje moraju biti, i jesu, svježe, domaće, naše.
– Ovo je stari recept, na moderan način – vele nam Bobisovi slastičari.
Kroz puna dva dana – tri se puta diže tijesto. Mora tako biti, jer je puno dobrih masnoća i tako "teško", smijemo se, ne bi se diglo godinu dana. Kvasac je svjež, pravi, nema dodataka, kemija, ni čuda, samo priroda. I dodir ljudske ruke.
– Nakon što se tijesto dizalo, dolazi na red proces fermentacije, pet sati, da se sve arome dobro prožmu – vele nam "bobisovci".
Nismo uspjeli izvući iz njih pravi recept, a i mislimo se – zašto i bi, kada se treba samo zaletjeti do Bobisa...
Pa nam pripovijedaju kako za svaku onu sirnicu koju – budite iskreni – smažemo u pet minuta, treba gotovo tri dana da bi se proizvela. Optimalna temperatura je uvjet, ali iskustvo je ono koje daje dodatan šarm proizvodu. U tijesto se ubacuju žumanjci, koristi se samo maslo, a naranča, vanilija, limun i maraskino su vrhunske kvalitete, uz, ne smije se propustiti, ružinu vodicu. To je taj miris o kojem smo vam govorili...
Nakon što se oblikuju kuglice, svaka određene gramaže, djelatnici Bobisa – režu tijesto, premazuju ga, zasipaju šećerom, istim onim koji lovite prstom po tanjuru, kada skupite sve mrvice, naravno.
Ako među vama ima onih koji se u vrijeme od Uskrsa trude izraditi vlastite sirnice, pa tijesto štite dekom, vrište na svaki pokušaj ukućana da otvore vrata i brižno paze na održavanje konstantne temperature – moramo vas utješiti. Nema potrebe – Bobis je sigurno iza kantuna!
Promatrali smo pakiranje mini sirnica, to su one koje za svoj gušt, za marendu, uz kavu "maznete" da nitko ne vidi, i možemo vam reći da takve kontrole nismo vidjeli ni na aerodromu. Svaki, baš svaki, komad se pregledava sa svih strana, pakira, ručno se lijepi svaka deklaracija i tek potom se slažu u one svima znane – Bobisove kutije.
Pričali smo vam o tradiciji s dodirom modernog, e, pa, uskrsna pogača od ove godine postaje za čokoljupce posebna, proizvodit će ih Bobisova ekipa i s komadićima čokolade.

Tradicija se mora poštovati
A ti uzmi jednu u Bobisa – rekla je majka.
Stvarno? – upitao sam, s nekih dvjesta upitnika iza te riječi.
Razmaženom djetetu, dosad naviklom isključivo na majčine kolače i spizu, odjednom se otvorio cijeli svijet novih mogućnosti. Jer, provesti Uskrs bez sirnice... kao da prođe Božić bez okićenog bora. A dobro se zna – u božićna i uskrsna jutra i sve njihove obiteljske običaje ne smije se dirati.
Staraca nije bilo u gradu tog Uskrsa, i odjednom se pojavila ozbiljna ugroza tradicionalnom guštanju u uskrsnom doručku. Pisanice su bile tu. Hajde, nekako smo uspjeli nalijepiti nekakve sličice. Skuhati jaje u toj dobi, iako je bilo pod "ne'š ti", i dalje se smatralo kulinarskim postignućem. Ali, napraviti sirnicu... E, to slobodno zaboravimo.
Zato je majka, ko prava majka, bila nadasve praktična. Pa je na naš molećiv poziv "što, gdje, kako" jednostavno odgovorila da kupimo sirnicu u Bobisa.
– Da kupimo sirnicu? – uslijedilo je čuđenje kao da se usudila drznuti u nešto najsvetije.
– Ali tvoje su najbolje. Domaće, ukusne – koliko god uzaludan bio pokušaj lomljenja zbog geografske udaljenosti, nekako je dužnost bila apelirati na majčinske osjećaje.
– A što vi, djeco, mislite, da ja baš svake godine napravim deset sirnica, kao da dosad niste jeli Bobisove. Eno vam je odmah ispod kuće, požurite i kupite dvije da imate za Uskrs – posložila je majka, kako samo majke znaju, hodogram aktivnosti.
I hajde je sada nemoj poslušati... Ništa, napravljeno je kako je majka rekla.
I, bome, uskrsno jutro nije bilo ništa manje ukusno. Dapače...

Kvaliteta, delicija
Od dana kada se rodio Bobis, sad već daleke 1949. godine, postao je sinonim za tradiciju, kvalitetu, delicije. Drukčije zamiriše dan uz njihov kruh... Ruku na srce, s Bobisom je rastao i Split sam, izmijenile se generacije, odrasla djeca, postali roditelji, postali djedovi i bake, ali Bobis je ostao konstanta. Razlog tome je što do vašeg stola stiže ljubav. Pratili su u stopu moderne tehnologije, ali nisu dopustili da uz njih nestane tradicija, sačuvali su duh vremena, pozitivan.

Nekada davno, dok je potpisnica ovih redaka bila dijete, sirnice su se mogle kupiti samo u vrijeme od Uskrsa. I to svega par dana ranije. Zaželjeli bismo ih se silno tijekom godine, pa kad bi stigle na police Bobisa – mame su morale po njih. Odmah. Hitno. Žurno.
I onda doma – ritual otvaranja vrećice. Tko će prvi, sestra ili ja.
A kad se vrećica otvori. Taj miris... Ne da se to prenijeti na papir!
Tako, vjerujem, miriše djetinjstvo.
Ureže se u receptore, ne da se izbaciti iz sistema, zauvijek je tu.
Razgovarali smo s onima koji određuju recepturu za Bobisove sirnice (odmah su vam draži, je l' tako?), i doznajemo kako je balans ono što je u procesu izrade sirnica bitno. Uz, to je svima jasno, namirnice koje moraju biti, i jesu, svježe, domaće, naše.
– Ovo je stari recept, na moderan način – vele nam Bobisovi slastičari.
Kroz puna dva dana – tri se puta diže tijesto. Mora tako biti, jer je puno dobrih masnoća i tako "teško", smijemo se, ne bi se diglo godinu dana. Kvasac je svjež, pravi, nema dodataka, kemija, ni čuda, samo priroda. I dodir ljudske ruke.
– Nakon što se tijesto dizalo, dolazi na red proces fermentacije, pet sati, da se sve arome dobro prožmu – vele nam "bobisovci".
Nismo uspjeli izvući iz njih pravi recept, a i mislimo se – zašto i bi, kada se treba samo zaletjeti do Bobisa...
Pa nam pripovijedaju kako za svaku onu sirnicu koju – budite iskreni – smažemo u pet minuta, treba gotovo tri dana da bi se proizvela. Optimalna temperatura je uvjet, ali iskustvo je ono koje daje dodatan šarm proizvodu. U tijesto se ubacuju žumanjci, koristi se samo maslo, a naranča, vanilija, limun i maraskino su vrhunske kvalitete, uz, ne smije se propustiti, ružinu vodicu. To je taj miris o kojem smo vam govorili...
Nakon što se oblikuju kuglice, svaka određene gramaže, djelatnici Bobisa – režu tijesto, premazuju ga, zasipaju šećerom, istim onim koji lovite prstom po tanjuru, kada skupite sve mrvice, naravno.
Ako među vama ima onih koji se u vrijeme od Uskrsa trude izraditi vlastite sirnice, pa tijesto štite dekom, vrište na svaki pokušaj ukućana da otvore vrata i brižno paze na održavanje konstantne temperature – moramo vas utješiti. Nema potrebe – Bobis je sigurno iza kantuna!
Promatrali smo pakiranje mini sirnica, to su one koje za svoj gušt, za marendu, uz kavu "maznete" da nitko ne vidi, i možemo vam reći da takve kontrole nismo vidjeli ni na aerodromu. Svaki, baš svaki, komad se pregledava sa svih strana, pakira, ručno se lijepi svaka deklaracija i tek potom se slažu u one svima znane – Bobisove kutije.
Pričali smo vam o tradiciji s dodirom modernog, e, pa, uskrsna pogača od ove godine postaje za čokoljupce posebna, proizvodit će ih Bobisova ekipa i s komadićima čokolade.

Tradicija se mora poštovati
A ti uzmi jednu u Bobisa – rekla je majka.
Stvarno? – upitao sam, s nekih dvjesta upitnika iza te riječi.
Razmaženom djetetu, dosad naviklom isključivo na majčine kolače i spizu, odjednom se otvorio cijeli svijet novih mogućnosti. Jer, provesti Uskrs bez sirnice... kao da prođe Božić bez okićenog bora. A dobro se zna – u božićna i uskrsna jutra i sve njihove obiteljske običaje ne smije se dirati.
Staraca nije bilo u gradu tog Uskrsa, i odjednom se pojavila ozbiljna ugroza tradicionalnom guštanju u uskrsnom doručku. Pisanice su bile tu. Hajde, nekako smo uspjeli nalijepiti nekakve sličice. Skuhati jaje u toj dobi, iako je bilo pod "ne'š ti", i dalje se smatralo kulinarskim postignućem. Ali, napraviti sirnicu... E, to slobodno zaboravimo.
Zato je majka, ko prava majka, bila nadasve praktična. Pa je na naš molećiv poziv "što, gdje, kako" jednostavno odgovorila da kupimo sirnicu u Bobisa.
– Da kupimo sirnicu? – uslijedilo je čuđenje kao da se usudila drznuti u nešto najsvetije.
– Ali tvoje su najbolje. Domaće, ukusne – koliko god uzaludan bio pokušaj lomljenja zbog geografske udaljenosti, nekako je dužnost bila apelirati na majčinske osjećaje.
– A što vi, djeco, mislite, da ja baš svake godine napravim deset sirnica, kao da dosad niste jeli Bobisove. Eno vam je odmah ispod kuće, požurite i kupite dvije da imate za Uskrs – posložila je majka, kako samo majke znaju, hodogram aktivnosti.
I hajde je sada nemoj poslušati... Ništa, napravljeno je kako je majka rekla.
I, bome, uskrsno jutro nije bilo ništa manje ukusno. Dapače...

Kvaliteta, delicija
Od dana kada se rodio Bobis, sad već daleke 1949. godine, postao je sinonim za tradiciju, kvalitetu, delicije. Drukčije zamiriše dan uz njihov kruh... Ruku na srce, s Bobisom je rastao i Split sam, izmijenile se generacije, odrasla djeca, postali roditelji, postali djedovi i bake, ali Bobis je ostao konstanta. Razlog tome je što do vašeg stola stiže ljubav. Pratili su u stopu moderne tehnologije, ali nisu dopustili da uz njih nestane tradicija, sačuvali su duh vremena, pozitivan.
