Eva Knezović rođena je i živi u Chicagu, ali cijela njezina obitelj dolazi iz Hrvatske.

Kako je ljeta provodila u Hrvatskoj, u druženju s velikom obitelji i usvajanju svojih korijena, tako je osjećaj za “doma” sve više povezivala s Hrvatskom.

Gledajući mamu i baku kako kuhaju domaće specijalitete, rasla je i njena ljubav prema hrani.

Nakon završenih prehrambenih studija u New Yorku, odlučila je u Chicagu otvoriti svoj restorančić i nazvala ga “Doma”. Doma je autentično mjesto gdje se uživa u domaćim specijalitetima poput juha, sarma, ćevapa, ali i kolača poput oblatnih, kiflica, breskvica.

Doma je mjesto koje objedinjuje Evinu ljubav prema hrani, hrvatskoj kulturi i dizajnu, ali i mjesto koje brojnim gostima svakodnevno pruža osjećaj kao da su kod kuće, piše journal.hr.

Otkrila je i kako se Amerikancima sviđaju naša jela te kako Hrvati reagiraju kada posjete Doma.

- Rođena sam u Chicagu, ali roditelji su mi iz Hrvatske pa svakog ljeta odlazim tamo provesti vrijeme s obitelji i povezati se s korijenima – tamo se najviše osjećam kao kod kuće - kazala je.

Odakle ideja za otvaranje hrvatskog restorana? Je li to bila tvoja želja već dugo, ili je do toga došlo spontano?

Išla sam na sveučilište u New Yorku gdje sam studirala Food Studies (kritičko ispitivanje hrane i njezinih konteksta unutar znanosti, umjetnosti, povijesti, društva i drugih područja) i radila sam u različitim područjima prehrambene industrije.

Oduvijek sam znala da želim raditi za sebe, ali nisam bila sigurna na koji način. Imala sam osjećaj da Chicagu nedostaje nešto jednostavno, a autentično. Oduvijek sam gledala baku i mamu kako kuhaju dok sam odrastala, tako da mi je to bilo vrlo prirodno.

Koliko je proces otvaranja hrvatskog restorana u Chicagu bio izazovan? Imaš li problema kod nabave nekih namirnica i sastojaka?

Najveći izazov bilo je otvaranje tijekom COVID-a. Počeli smo s tri artikla na jelovniku i od tamo je sve krenulo.

Šalim se da sam guglala “kako otvoriti restoran” jer mi je sve to bilo jako novo u vrlo teškom okruženju, ali ne bih to mogla bez svoje obitelji i svih koji su mi pomogli.

Kao i mnoge druge industrije, imali smo poteškoća s nabavom sastojaka zbog stanja globalne ekonomije. Koristimo puno lokalnih sastojaka poput jaja, mesa, voća i meda, pa je bilo teško održavati dosljedne zalihe, a i cijene su uvelike porasle. Svaki dan donosi nove izazove, ali jako sam ponosna koliko smo narasli unatoč svim tim izazovima.

Kako su gosti prihvatili hrvatsku hranu? Imaju li Amerikanci neki favorit od naših jela?

Svi vole hrvatsku hranu, a posebno naš domaći burek, peciva i ćevape – dobili smo nagradu za najbolji sendvič u Chicagu prošle godine od novina The Chicago Tribune!

Sviđa im se što imamo hrvatske i neke europske specijalitete, ali i američke opcije poput hash browna, tako da ima za svakoga ponešto.

Ova kombinacija hrane pravi je odraz mog odrastanja, ali i načina na koji danas jedem.

Neka od jela koja smo vidjeli da pripremate su ćevapi, sarma, burek, domaće juhe i kolači. Tko je zaslužan za recepture i pripremu tih jela?

Inspiraciju za naše recepte dobivamo s više mjesta, ali uvijek se sjetim “kako to rade doma”.

Na početku smo sestra Marina i ja spremale kolače, sestra Kata je pravila burek, a brat Marijan (po njemu se zove Brato’s Turkey Sando) radio je u prednjoj blagovaonici i mamio osmijehe svim gostima.

Tata i stric prave kiseli kupus koji koristimo za naše sarme, a to je mamin recept.

Budući da su naš jelovnik i klijentela toliko porasli, sada s nama rade još dvije Hrvatice, jedna koja radi slane artikle i jedna koja radi kolače. Voljela bih imati cijelu ekipu domaćica da proširimo jelovnik!

Čak si i u uređenje unijela hrvatski duh; od stolnjaka i podmetača, do starinskih tanjura i zdjela. Tko je zaslužan za uređenje prostora i odabir detalja, a tko za vizualni identitet Doma?

Ja sam odabrala svaki detalj za kafić, od dizajna do tanjura i tako dalje.

Inspiriram se tipičnim kafićima u Hrvatskoj i kućom moje tete – htjela sam postići osjećaj pravog doma.

Kakve su reakcije Hrvata kada dođu u Doma?

Vjerujem da su ljudi oduševljeni iskusiti svoju kulturu i ponovno se povezati s njom na mjestu kao što je Doma. Sretna sam što im mogu omogućiti to iskustvo čak i u Chicagu. Volim upoznavati ljude s Balkana, to su neke od najboljih interakcija koje sam imala.

Osim restorana, imaš i trgovinu vintage namještaja Doma by Doma. Kako je došlo do te priče?

Kad sam se preselila iz New Yorka u Chicago, počela sam nabavljati namještaj za svoj stan i primijetila da se ljudima jako sviđa moja kolekcija, pa sam je počela prodavati.

Eva Knezović rođena je i živi u Chicagu, ali cijela njezina obitelj dolazi iz Hrvatske.

Kako je ljeta provodila u Hrvatskoj, u druženju s velikom obitelji i usvajanju svojih korijena, tako je osjećaj za “doma” sve više povezivala s Hrvatskom.

Gledajući mamu i baku kako kuhaju domaće specijalitete, rasla je i njena ljubav prema hrani.

Nakon završenih prehrambenih studija u New Yorku, odlučila je u Chicagu otvoriti svoj restorančić i nazvala ga “Doma”. Doma je autentično mjesto gdje se uživa u domaćim specijalitetima poput juha, sarma, ćevapa, ali i kolača poput oblatnih, kiflica, breskvica.

Doma je mjesto koje objedinjuje Evinu ljubav prema hrani, hrvatskoj kulturi i dizajnu, ali i mjesto koje brojnim gostima svakodnevno pruža osjećaj kao da su kod kuće, piše journal.hr.

Otkrila je i kako se Amerikancima sviđaju naša jela te kako Hrvati reagiraju kada posjete Doma.

- Rođena sam u Chicagu, ali roditelji su mi iz Hrvatske pa svakog ljeta odlazim tamo provesti vrijeme s obitelji i povezati se s korijenima – tamo se najviše osjećam kao kod kuće - kazala je.

Odakle ideja za otvaranje hrvatskog restorana? Je li to bila tvoja želja već dugo, ili je do toga došlo spontano?

Išla sam na sveučilište u New Yorku gdje sam studirala Food Studies (kritičko ispitivanje hrane i njezinih konteksta unutar znanosti, umjetnosti, povijesti, društva i drugih područja) i radila sam u različitim područjima prehrambene industrije.

Oduvijek sam znala da želim raditi za sebe, ali nisam bila sigurna na koji način. Imala sam osjećaj da Chicagu nedostaje nešto jednostavno, a autentično. Oduvijek sam gledala baku i mamu kako kuhaju dok sam odrastala, tako da mi je to bilo vrlo prirodno.

Koliko je proces otvaranja hrvatskog restorana u Chicagu bio izazovan? Imaš li problema kod nabave nekih namirnica i sastojaka?

Najveći izazov bilo je otvaranje tijekom COVID-a. Počeli smo s tri artikla na jelovniku i od tamo je sve krenulo.

Šalim se da sam guglala “kako otvoriti restoran” jer mi je sve to bilo jako novo u vrlo teškom okruženju, ali ne bih to mogla bez svoje obitelji i svih koji su mi pomogli.

Kao i mnoge druge industrije, imali smo poteškoća s nabavom sastojaka zbog stanja globalne ekonomije. Koristimo puno lokalnih sastojaka poput jaja, mesa, voća i meda, pa je bilo teško održavati dosljedne zalihe, a i cijene su uvelike porasle. Svaki dan donosi nove izazove, ali jako sam ponosna koliko smo narasli unatoč svim tim izazovima.

Kako su gosti prihvatili hrvatsku hranu? Imaju li Amerikanci neki favorit od naših jela?

Svi vole hrvatsku hranu, a posebno naš domaći burek, peciva i ćevape – dobili smo nagradu za najbolji sendvič u Chicagu prošle godine od novina The Chicago Tribune!

Sviđa im se što imamo hrvatske i neke europske specijalitete, ali i američke opcije poput hash browna, tako da ima za svakoga ponešto.

Ova kombinacija hrane pravi je odraz mog odrastanja, ali i načina na koji danas jedem.

Neka od jela koja smo vidjeli da pripremate su ćevapi, sarma, burek, domaće juhe i kolači. Tko je zaslužan za recepture i pripremu tih jela?

Inspiraciju za naše recepte dobivamo s više mjesta, ali uvijek se sjetim “kako to rade doma”.

Na početku smo sestra Marina i ja spremale kolače, sestra Kata je pravila burek, a brat Marijan (po njemu se zove Brato’s Turkey Sando) radio je u prednjoj blagovaonici i mamio osmijehe svim gostima.

Tata i stric prave kiseli kupus koji koristimo za naše sarme, a to je mamin recept.

Budući da su naš jelovnik i klijentela toliko porasli, sada s nama rade još dvije Hrvatice, jedna koja radi slane artikle i jedna koja radi kolače. Voljela bih imati cijelu ekipu domaćica da proširimo jelovnik!

Čak si i u uređenje unijela hrvatski duh; od stolnjaka i podmetača, do starinskih tanjura i zdjela. Tko je zaslužan za uređenje prostora i odabir detalja, a tko za vizualni identitet Doma?

Ja sam odabrala svaki detalj za kafić, od dizajna do tanjura i tako dalje.

Inspiriram se tipičnim kafićima u Hrvatskoj i kućom moje tete – htjela sam postići osjećaj pravog doma.

Kakve su reakcije Hrvata kada dođu u Doma?

Vjerujem da su ljudi oduševljeni iskusiti svoju kulturu i ponovno se povezati s njom na mjestu kao što je Doma. Sretna sam što im mogu omogućiti to iskustvo čak i u Chicagu. Volim upoznavati ljude s Balkana, to su neke od najboljih interakcija koje sam imala.

Osim restorana, imaš i trgovinu vintage namještaja Doma by Doma. Kako je došlo do te priče?

Kad sam se preselila iz New Yorka u Chicago, počela sam nabavljati namještaj za svoj stan i primijetila da se ljudima jako sviđa moja kolekcija, pa sam je počela prodavati.
