Kada biste morali odabrati samo jednu namirnicu i dodijeliti joj tituli svestranog priloga koji se slaže s najvećim brojem jela, koja bi to bila? U našem slučaju to bi zasigurno bio krumpir, što zbog raznih načina na koje se sve može pripremiti, što zbog prilagodljivog okusa i jednostavne mogućnosti kombiniranja s drugim jelima.
No, jedan način pripreme ove jeftine, a svima drage namirnice, čuva posebno mjesto u našim srcima i želucima, a riječ je o pečenom krumpiru. Trikove slavnih kuhara više puta smo pokušali isprobati, no kombinacija hrskave korice i mekane sredine nekako nam nikada nije dosegla idealnu ravnotežu. Barem ne dok nismo otkrili recept 'bosonoge kontese' Ine Garten.
Inine recepte, u emisiji 'Barefoot Contessa' godinama pratimo, no činjenica da je recept za pečeni krumpir koji je objavila blokirao njenu stranicu zbog velikog broja pregleda, jednostavno nas je zaintrigirala da otkrijemo u čemu je kvaka.

Zapravo, riječ je o receptu poznate britansko-američke glumice Emily Blunt, koji Ina s ponosom planira objaviti u svojoj nadolazećoj kuharici 'Modern Comfort Food'. Recept je obećavao točno ono čemu smo težili, a rezultat je bio i više nego zadovoljavajući.
Savršeno pečeni krumpir
Pomislit ćete da pečenje krumpira ne podrazumijeva neku veliku filozofiju, no Emily i Ina donose nekoliko trikova uz koje će vaš prilog jednostavno oduševiti gurmane za stolom. Rezultat je kombinacija kremaste unutrašnjosti i hrskave korice, a evo kako to jednostavno postići.

Za pripremu pečenog krumpira, Emily predlaže da odaberete neku od brašnastih sorti. Osobno, ona koristi Yukon Gold sortu, no jednako su dobre i Desiree, Courage, Cleopatra i Liseta sorte. Također, trebat će vam i dvije vrste soli, sitna i krupna, te aromatični začini po izboru, poput ružmarina ili timijana.
Priprema
Nakon što ogulite i narežete krumpire, a prije samog pečenja, Emily savjetuje da ih malo prokuhate u slanoj vodi. Mi smo to napravili tako da smo ih kuhali osam minuta nakon što je voda proključala. Nakon kuhanja, Emily savjetuje da krumpire procijedite te ih vratite i lonac u kojem su se kuhali.
Sada slijedi zabavni dio. Polukuhane krumpire poklopite u loncu te ih uz nekoliko jačih pokreta protresite. Rubovi krumpira tako će lagano omekšati i postat će savršena podloga za hrskavu teksturu koju ćete dobiti pečenjem.
Sljedeći korak iznimno je bitan, a sjećamo se da smo ga svojedobno otkrili i pregledavajući emisije popularnog Jamieja Olivera. Skuhane i protresene krumpire prebacite na suhi lim i rasporedite ih kako bi se počeli hladiti te kako bi iz njih izašla sva para. Emily i Ina ovo smatraju bitnim detaljem želite li da vam krumpir ispadne baš onakav kakav zamišljate.

Nakon što je sva para iz krumpira nestala, krumpire nježno premjestite na nauljenu tepsiju u kojoj ih planirate peći. Emily savjetuje korištenje suncokretovog ulja, no mi se smo ipak zbog arome odlučili za kombinaciju maslinovim. Krumpire blagim pokretima ruke dobro nauljite, te ih zbog bogatstva okusa, začinite krupnom solju koja će nakon pečenja dati posebnu esenciju vašem prilogu.
Svoje smo krumpire začinili ružmarinom, a iako ne piše u receptu, na vrh smo dodali i nekoliko komadića maslaca. No slobodno si ovdje dajte prostora za eksperimentiranje i sami odredite koji vam okusi i arome začina najviše odgovaraju.
Krumpire potom stavite u pećnicu na 200 stupnjeva. Preporučeno vrijeme pečenja je oko 45 minuta, s tim da biste ih nakon 20 minuta trebali izvaditi i promiješati kako bi se jednako zapekli sa svih strana.

Kada biste morali odabrati samo jednu namirnicu i dodijeliti joj tituli svestranog priloga koji se slaže s najvećim brojem jela, koja bi to bila? Trikove slavnih kuhara više puta smo pokušali isprobati, no kombinacija hrskave korice i mekane sredine nekako nam nikada nije dosegla idealnu ravnotežu. Barem ne dok nismo otkrili recept 'bosonoge kontese' Ine Garten.
Inine recepte, u emisiji 'Barefoot Contessa' godinama pratimo, no činjenica da je recept za pečeni krumpir koji je objavila blokirao njenu stranicu zbog velikog broja pregleda, jednostavno nas je zaintrigirala da otkrijemo u čemu je kvaka.

Priprema
Nakon što ogulite i narežete krumpire, a prije samog pečenja, Emily savjetuje da ih malo prokuhate u slanoj vodi. Mi smo to napravili tako da smo ih kuhali osam minuta nakon što je voda proključala. Nakon kuhanja, Emily savjetuje da krumpire procijedite te ih vratite i lonac u kojem su se kuhali.
Sada slijedi zabavni dio. Polukuhane krumpire poklopite u loncu te ih uz nekoliko jačih pokreta protresite. Rubovi krumpira tako će lagano omekšati i postat će savršena podloga za hrskavu teksturu koju ćete dobiti pečenjem.
Sljedeći korak iznimno je bitan, a sjećamo se da smo ga svojedobno otkrili i pregledavajući emisije popularnog Jamieja Olivera. Skuhane i protresene krumpire prebacite na suhi lim i rasporedite ih kako bi se počeli hladiti te kako bi iz njih izašla sva para. Nakon što je sva para iz krumpira nestala, krumpire nježno premjestite na nauljenu tepsiju u kojoj ih planirate peći. Emily savjetuje korištenje suncokretovog ulja, no mi se smo ipak zbog arome odlučili za kombinaciju maslinovim. Krumpire blagim pokretima ruke dobro nauljite, te ih zbog bogatstva okusa, začinite krupnom solju koja će nakon pečenja dati posebnu esenciju vašem prilogu.
Svoje smo krumpire začinili ružmarinom, a iako ne piše u receptu, na vrh smo dodali i nekoliko komadića maslaca. No slobodno si ovdje dajte prostora za eksperimentiranje i sami odredite koji vam okusi i arome začina najviše odgovaraju.
Krumpire potom stavite u pećnicu na 200 stupnjeva. Preporučeno vrijeme pečenja je oko 45 minuta, s tim da biste ih nakon 20 minuta trebali izvaditi i promiješati kako bi se jednako zapekli sa svih strana.
