Što je ljeto bez fažoleta? Lešo, na salatu, na čorbicu, svi ih kuhamo i svi guštamo u našoj dobroj, staroj domaćoj spizi. E, kako ne! Mislite li da su naši, na krivom ste tragu. Pomalo je depresivno upustiti se u istraživanje namirnica bez kojih nam je teško zamisliti ljeto u Dalmaciji jer ispada da skoro ništa nije naše, domaće. Sve sami uvoz. I to ne (samo) u smislu ponude u trgovinama, nego i u smislu povijesnog podrijetla. Pome? Amerika. Paprike? Amerika. Balancane? Azija. Tikvice? Srednja Amerika. Ako ste se ponadali da su barem fažoleti naši, ništa od toga. Opet Amerika. Preciznije, Južna.

Sve one sorte, od tankih zelenih do širokih žutih, plosnate, okrugle, bizarno dugačke ili one sasvim taman, sve nam je to došlo s druge strane Atlantika i to zahvaljujući Španjolcima, odnosno njihovim osvajačkim pretenzijama i pohlepi za zlatom. Otkrili su ih za vrijeme invazije na teritorij drevnih Maja i Inka, gdje su se mahune u svoj svojoj širokoj paleti uzgajale unatrag barem sedam tisuća godina.

I dobro da su nam ih donijeli jer su po nutritivnom sastavu vrlo impresivno povrće. Osim toga što sadrže impozantnu količinu vlakana, kao od šale zadovoljavaju dnevne potrebu za proteinima i velikim dijelom vitamina. Odličan su izvor vitamina K, C, B2, B6, E i A, a sadrže i veliku količinu mangana, bakra i željeza te silicija koji je na glasu kao čuvar kostiju i vezivnih tkiva. Neka istraživanja pokazuju da snižavaju kolesterol i reguliraju šećer u krvi, a navodno čak i povećavaju plodnost te štite zdravlje nerođenog djeteta.

Fažoleti omotani pancetom i zapečeni
Sastojci
750 g fažoleta (uskih, zelenih)
12 fetica pancete
2 žlice maslinova ulja
1 žlica sitno sjeckanog začinskog bilja
1 žličica češnjaka u prahu
sol, papar
Priprema:
Skuhajte fažolete u slanoj vodi da budu al dente pa ih dobro ocijedite. Prebacite na kuhinjski ubrus ili krpu da upije što više vode. Podijelite na 12 hrpica pa svaku po sredini omotajte pancetom te učvrstite čačkalicom.
Zagrijte pećnicu na 200 stupnjeva celzija. Vezice fažoleta poslažite na lim za pečenje, poškropite uljem, dodajte sol i papar te pecite 15-ak minuta. Pospite začinima i poslužite.

Široki fažoleti na cušpajz
Sastojci:
750 g širokih žutih ili ljubičastih fažoleta
350 g krumpira
30 g brašna
50 ml pasirane rajčice
2 glavice luka
2 mrkve
1/8 korijena selena
2 češnja češnjaka
1 žličica slatke paprike
ulje
sol, papar
Priprema:
Očistite fažolete i prerežite ih na 3-4 dijela, krumpir i mrkvu nasjeckajte na kockice, a luk, češnjak i korijen selena usitnite.
U lonac debljeg dna stavite par žlica ulja pa na njima prepržite luk, češnjak, selen i mrkvu pa kad luk postane staklast, a češnjak zamiriše, dodajte pasiranu rajčicu i kuhajte koju minutu uz miješanje pa ubacite fažolete i crvenu mljevenu papriku. Zalijte vodom tako da je sve prekriveno i kuhajte poklopljeno 10-15 minuta.
Ubacite krumpir, sol i papar pa dodajte još vode i kuhajte dok krumpir nije napola gotov. Pomiješajte brašno i oko 100 ml vode pa dodajte mahunama i kuhajte još 5-10 minuta, odnosno dok se malo ne zgusne, a krumpir skuha do kraja.

Mediteranska salata od fažoleta
Sastojci:
500 g fažoleta (uskih, zelenih)
100 g slanog kozjeg sira
70 g tostiranih badema u listićima
10-ak maslina bez koštice
1 velika rajčica
1/4 crvenog luka
1-2 žlice kvasine
2 žličice Dijon senfa
sol, papar
Priprema:
Očistite fažolete pa ih kuhajte u dosta vrele, dobro posoljene vode dok ne omekšaju, ali su još uvijek malo hrskave. Prebacite ih u hladnu vodu i pustite da se ohlade.
Pomiješajte maslinovo ulje, kvasinu, senf, sol i papar.
Pomiješajte fažolete, luk narezan na listiće, rajčicu narezanu na kockice, masline i preljev. Dodajte sir i pospite listićima badema.

Fažoleti s lukom i maslacem
Sastojci:
700 g fažoleta
3 češnja češnjaka
2 žlice maslaca
2 žlice maslinova ulja
sol, papar
Priprema:
Očistite fažolete pa ih kuhajte u dosta vrele, dobro posoljene vode.
Zagrijte maslinovo ulje i češnjak, miješajte i pazite da ne zagori, a kad češnjak zamiriše dodajte fažolete i maslac, smanjite vatru pa sve dobro promiješajte. Poslužite odmah, ali dobro je i kad se ohladi.

Što je ljeto bez fažoleta? Lešo, na salatu, na čorbicu, svi ih kuhamo i svi guštamo u našoj dobroj, staroj domaćoj spizi. E, kako ne! Mislite li da su naši, na krivom ste tragu. Pomalo je depresivno upustiti se u istraživanje namirnica bez kojih nam je teško zamisliti ljeto u Dalmaciji jer ispada da skoro ništa nije naše, domaće. Sve sami uvoz. I to ne (samo) u smislu ponude u trgovinama, nego i u smislu povijesnog podrijetla. Pome? Amerika. Paprike? Amerika. Balancane? Azija. Tikvice? Srednja Amerika. Ako ste se ponadali da su barem fažoleti naši, ništa od toga. Opet Amerika. Preciznije, Južna.

Sve one sorte, od tankih zelenih do širokih žutih, plosnate, okrugle, bizarno dugačke ili one sasvim taman, sve nam je to došlo s druge strane Atlantika i to zahvaljujući Španjolcima, odnosno njihovim osvajačkim pretenzijama i pohlepi za zlatom. Otkrili su ih za vrijeme invazije na teritorij drevnih Maja i Inka, gdje su se mahune u svoj svojoj širokoj paleti uzgajale unatrag barem sedam tisuća godina.

I dobro da su nam ih donijeli jer su po nutritivnom sastavu vrlo impresivno povrće. Osim toga što sadrže impozantnu količinu vlakana, kao od šale zadovoljavaju dnevne potrebu za proteinima i velikim dijelom vitamina. Odličan su izvor vitamina K, C, B2, B6, E i A, a sadrže i veliku količinu mangana, bakra i željeza te silicija koji je na glasu kao čuvar kostiju i vezivnih tkiva. Neka istraživanja pokazuju da snižavaju kolesterol i reguliraju šećer u krvi, a navodno čak i povećavaju plodnost te štite zdravlje nerođenog djeteta.

Fažoleti omotani pancetom i zapečeni
Sastojci
750 g fažoleta (uskih, zelenih)
12 fetica pancete
2 žlice maslinova ulja
1 žlica sitno sjeckanog začinskog bilja
1 žličica češnjaka u prahu
sol, papar
Priprema:
Skuhajte fažolete u slanoj vodi da budu al dente pa ih dobro ocijedite. Prebacite na kuhinjski ubrus ili krpu da upije što više vode. Podijelite na 12 hrpica pa svaku po sredini omotajte pancetom te učvrstite čačkalicom.
Zagrijte pećnicu na 200 stupnjeva celzija. Vezice fažoleta poslažite na lim za pečenje, poškropite uljem, dodajte sol i papar te pecite 15-ak minuta. Pospite začinima i poslužite.

Široki fažoleti na cušpajz
Sastojci:
750 g širokih žutih ili ljubičastih fažoleta
350 g krumpira
30 g brašna
50 ml pasirane rajčice
2 glavice luka
2 mrkve
1/8 korijena selena
2 češnja češnjaka
1 žličica slatke paprike
ulje
sol, papar
Priprema:
Očistite fažolete i prerežite ih na 3-4 dijela, krumpir i mrkvu nasjeckajte na kockice, a luk, češnjak i korijen selena usitnite.
U lonac debljeg dna stavite par žlica ulja pa na njima prepržite luk, češnjak, selen i mrkvu pa kad luk postane staklast, a češnjak zamiriše, dodajte pasiranu rajčicu i kuhajte koju minutu uz miješanje pa ubacite fažolete i crvenu mljevenu papriku. Zalijte vodom tako da je sve prekriveno i kuhajte poklopljeno 10-15 minuta.
Ubacite krumpir, sol i papar pa dodajte još vode i kuhajte dok krumpir nije napola gotov. Pomiješajte brašno i oko 100 ml vode pa dodajte mahunama i kuhajte još 5-10 minuta, odnosno dok se malo ne zgusne, a krumpir skuha do kraja.

Mediteranska salata od fažoleta
Sastojci:
500 g fažoleta (uskih, zelenih)
100 g slanog kozjeg sira
70 g tostiranih badema u listićima
10-ak maslina bez koštice
1 velika rajčica
1/4 crvenog luka
1-2 žlice kvasine
2 žličice Dijon senfa
sol, papar
Priprema:
Očistite fažolete pa ih kuhajte u dosta vrele, dobro posoljene vode dok ne omekšaju, ali su još uvijek malo hrskave. Prebacite ih u hladnu vodu i pustite da se ohlade.
Pomiješajte maslinovo ulje, kvasinu, senf, sol i papar.
Pomiješajte fažolete, luk narezan na listiće, rajčicu narezanu na kockice, masline i preljev. Dodajte sir i pospite listićima badema.

Fažoleti s lukom i maslacem
Sastojci:
700 g fažoleta
3 češnja češnjaka
2 žlice maslaca
2 žlice maslinova ulja
sol, papar
Priprema:
Očistite fažolete pa ih kuhajte u dosta vrele, dobro posoljene vode.
Zagrijte maslinovo ulje i češnjak, miješajte i pazite da ne zagori, a kad češnjak zamiriše dodajte fažolete i maslac, smanjite vatru pa sve dobro promiješajte. Poslužite odmah, ali dobro je i kad se ohladi.
