Čim smo prije par tjedana na Instagramu Bake Me By Nina vidjeli fotografiju ove "uhate" slastice, sačuvali smo je kako bismo vam je predstavili uoči Uskrsa. A ona je od tada postala prava zvijezda društvenih mreža. Nikakvo čudo - priznajte da odavno niste vidjeli simpatičniju i ljepšu blagdansku torticu.
Samo što ovo nije torta, nego paska, a paska je ukrajinski specijalitet koji je priprema za Uskrs. Recept nas podsjeća na sirnice, uz dodatak suhih brusnica, što, sigurni smo (jer volimo brusnice) baš lijepo osvježava kombinaciju poznatih okusa. Nina (Mrvica, iz Šibenika, ako je već ne pratite ne znate što propuštate) je ovaj recept jako dobro usavršila dodavši paski i uši od tijesta za kekse, a sve je na kraju prelila glazurom. Opći dojam: sjedi, pet. Okus? Jedva čekamo doznati!
Paska
Sastojci:
650 g glatkog brašna
14 g suhog kvasca (dvije vrećice)
200 g maslaca, otopljen
180 g šećera
250 ml mlakog mlijeka
5 žumanjaka
1 žličica soli
naribana korica jednog limuna
100 g suhih brusnica
Za uši:
115 g maslaca sobne temperature
60 g šećera u prahu
1 žličica ekstrakta vanilije
1 žumanjak jaja S veličine
150 g glatkog brašna
10 g kakao praha
prstohvat soli
Za glazuru:
3-4 bjelanjka
480 g šećera u prahu
ružičasta prehrambena boja (Fractal u gelu, naziv Tan)
jestive šarene perlice
Priprema
Okrugli kalup s dubljim obrubom (kao za Panettone), kartonske posudice za pečenje promjera 18 cm ili lonac promjera 18 cm koji nema plastične ručke namastite te mu dno obložite papirom za pečenje. Rubove pobrašnite.
Odvojite 65 g brašna, kvasac i 115 g mlakog mlijeka pa sve pomiješajte, poklopite i ostavite pola sata na toplom. Zatim kvascu dodajte žumanjke, šećer, sol, rastopljen i ohlađen maslac te preostalo mlijeko i brašno pa dobro izmiješajte mikserom ili kuhačom. Prekrijte i ostavite pola sata da odmori.
Nakon toga umiješajte grožđice i brusnice, oblikujte kuglu pa tijesto prebacite u pripremljen kalup. Pokrijte i ostavite još sat vremena ili dok se ne udvostruči. Prije pečenja tijesto zarežite na vrhu kako vam ne bi puklo i pecite 50 minuta u pećnici zagrijanoj na 180 stupnjeva.
Za uši pomiješajte maslac i šećer, dodajte im žumanjak pa sve povežite. Dodajte ekstrakt vanilije i sol, zatim brašno i kakao pa sve dobro izradite. Zamotajte u prozirnu foliju i spremite u hladnjak na pola sata, zatim razvaljajte na debljinu oko 4 milimetra, izrežite oblik ušiju i pecite oko 9 minuta u pećnici zagrijanoj na 180 stupnjeva.
Za glazuru bjelanjke istucite dok se ne zapjene pa im dodajte šećer u prahu i miksajte dok ne dobijete kompaktnu i sjajnu glazuru. Podijelite na dva dijela, u jedan dodajte ružičastu pa svaki dio stavite u zasebnu slastičarsku vrećicu s malenim otvorom. Ukrasite keksiće i ostavite da se glazura stisne, a ostatak glazure prelijte preko ohlađene Paske. Odmah dodajte šarene mrvice te zabodite uši u koje ste prethodno umetnuli štapić za ražnjiće. •

Čim smo prije par tjedana na Instagramu Bake Me By Nina vidjeli fotografiju ove "uhate" slastice, sačuvali smo je kako bismo vam je predstavili uoči Uskrsa. A ona je od tada postala prava zvijezda društvenih mreža. Nikakvo čudo - priznajte da odavno niste vidjeli simpatičniju i ljepšu blagdansku torticu.
Samo što ovo nije torta, nego paska, a paska je ukrajinski specijalitet koji je priprema za Uskrs. Recept nas podsjeća na sirnice, uz dodatak suhih brusnica, što, sigurni smo (jer volimo brusnice) baš lijepo osvježava kombinaciju poznatih okusa. Nina (Mrvica, iz Šibenika, ako je već ne pratite ne znate što propuštate) je ovaj recept jako dobro usavršila dodavši paski i uši od tijesta za kekse, a sve je na kraju prelila glazurom. Opći dojam: sjedi, pet. Okus? Jedva čekamo doznati!
Paska
Sastojci:
650 g glatkog brašna
14 g suhog kvasca (dvije vrećice)
200 g maslaca, otopljen
180 g šećera
250 ml mlakog mlijeka
5 žumanjaka
1 žličica soli
naribana korica jednog limuna
100 g suhih brusnica
Za uši:
115 g maslaca sobne temperature
60 g šećera u prahu
1 žličica ekstrakta vanilije
1 žumanjak jaja S veličine
150 g glatkog brašna
10 g kakao praha
prstohvat soli
Za glazuru:
3-4 bjelanjka
480 g šećera u prahu
ružičasta prehrambena boja (Fractal u gelu, naziv Tan)
jestive šarene perlice
Priprema
Okrugli kalup s dubljim obrubom (kao za Panettone), kartonske posudice za pečenje promjera 18 cm ili lonac promjera 18 cm koji nema plastične ručke namastite te mu dno obložite papirom za pečenje. Rubove pobrašnite.
Odvojite 65 g brašna, kvasac i 115 g mlakog mlijeka pa sve pomiješajte, poklopite i ostavite pola sata na toplom. Zatim kvascu dodajte žumanjke, šećer, sol, rastopljen i ohlađen maslac te preostalo mlijeko i brašno pa dobro izmiješajte mikserom ili kuhačom. Prekrijte i ostavite pola sata da odmori.
Nakon toga umiješajte grožđice i brusnice, oblikujte kuglu pa tijesto prebacite u pripremljen kalup. Pokrijte i ostavite još sat vremena ili dok se ne udvostruči. Prije pečenja tijesto zarežite na vrhu kako vam ne bi puklo i pecite 50 minuta u pećnici zagrijanoj na 180 stupnjeva.
Za uši pomiješajte maslac i šećer, dodajte im žumanjak pa sve povežite. Dodajte ekstrakt vanilije i sol, zatim brašno i kakao pa sve dobro izradite. Zamotajte u prozirnu foliju i spremite u hladnjak na pola sata, zatim razvaljajte na debljinu oko 4 milimetra, izrežite oblik ušiju i pecite oko 9 minuta u pećnici zagrijanoj na 180 stupnjeva.
Za glazuru bjelanjke istucite dok se ne zapjene pa im dodajte šećer u prahu i miksajte dok ne dobijete kompaktnu i sjajnu glazuru. Podijelite na dva dijela, u jedan dodajte ružičastu pa svaki dio stavite u zasebnu slastičarsku vrećicu s malenim otvorom. Ukrasite keksiće i ostavite da se glazura stisne, a ostatak glazure prelijte preko ohlađene Paske. Odmah dodajte šarene mrvice te zabodite uši u koje ste prethodno umetnuli štapić za ražnjiće. •
