Tiramisu je slavni talijanski desert od bogate kreme na bazi pomno žbačenih jaja, kremastog mascarponea, slatakste Marsale, keksa tipa savojardi, poznatih i kao piškote te kakao praha, koji spomenutim sastojcima pruža tako lijep okusni kontrast. Mnogi od nas znaju barem jedan recept za tiramisu, no malo tko zna zašto ta obožavana slastica nosi baš takvo, pomalo čudno ime. Znate li vi?
Ako govorite talijanski, možda ste ga već preveli - prijevod je jednostavan i doslovan, a značenje mu je "podigni me" - no znate li zbog čega je odabrana baš ta kombinacija riječi? Jer nije nimalo slučajna, a ako ćemo vjerovati jednoj od čak tri teorije o njegovom nastanku - i to onoj najskandaloznijoj - ne samo da nije slučajna nego je i sasvim opravdana
No zaustavimo se samo na trenutak na one dvije manje skandalozne, ali međusobno suprotstavljene teorije. Prema jednoj, izumitelj slavnog deserta je Ado Campeol, a mjesto na kojem je tiramisu nastao je Treviso, preciznije Campeolov restoran, Le Beccherie. Ova priča ne objašnjava zašto se slastica koja je osvojila svijet zove baš tiramisu, ali nudi pomalo neuvjerljiv razlog: sve se dogodilo pukom srećom.

Prema toj legendi, jer teško se oteti dojmu da nije ništa više od puke legende, jednog dana Campeolov kuhar Roberto Linguanotto slučajno je ispustio mascarpone u zdjelu s jajima i šećerom. Ma zamislite! I ne samo da je bio iznimno precizan nehotični strijelac, Roberto se odvažio umočiti prst u zdjelu i kušati. Okus mu se, eto, svidio pa je obavijestio gazdaricu Albu, Adovu suprugu, što se upravo dogodilo u kuhinji. Njih su se dvoje potom bacili na mudrovanje što bi se s tim spojem moglo napraviti pa su se dosjetili dodati mu kavom natopljene savojarde. I bi tiramisu.
Nije zabilježeno kad se točno odigrala ta sretna kulinarska nezgoda, no tiramisu se u Adovom restoranu na jelovniku našao 1972. godine i odmah je postao veliki hit, najprije u restoranu Le Beccherie, a potom u cijelom svijetu. Popularnost mu je, štoviše, postigla tolike razmjere da su u Talijanskoj akademiji kuhinje zaključili da ga je potrebno zaštititi. Stoga je na kraju certificiran, ponajprije u nastojanju da se spriječe po mišljenju purista skandalozne varijacije s jagodama i slatkim vrhnjem.

Suprotstavljena teorija proglašava kuhara po imenu Carminantonio Iannaccone tvorcem ovog deserta. Ne treba posebno isticati da je zapravo Carminantonio onaj koji se takvim proglasio. Unatoč tome, puno je onih koji mu vjeruju.
I - treća sreća - evo nas na teoriji koja ne samo da je najzanimljivija nego i najpikantnija, no ono što je najvažnije je da jedina daje objašnjenje neobičnog naziva. Prema toj priči, tiramisu je zapravo nastao u bordelima u Trevisu i to kao afrodizijak oko 1800. godine. Navodno ga je osmislila poduzetna madam iz jedne dobro posjećene kuće užitaka.
S ciljem podebljavanja prihoda, “siora” koja je vodila lokal odlučila je podebljati ponudu svog bordela desertom afrodizijačkih svojstava: mješavinom zaslađenih žbačenih jaja i slatkog vina, kakva se od davnina davala bolesnicima i djeci da ih malo "pokripi".

Vrlo oštroumno od nje, jer ne samo da su posjetitelji nakon konzumacije bili spremni na novu turu vragolija među plahtama, nego su imali običaj u gluho doba noći, prije nego bi se vratili svojim gospođama, pojesti još jednu porciju tiramiusa kako bi malo "došli sebi".
Priča o slatkoj Viagri iz bordela neimenovane "siore" dugo je ostala, iz razumljivih razloga, skrivena velom tajne, no tu i tamo procurilo bi poneko svjedočanstvo. Jednim od takvih smatra se isječak iz memoara književnika i znanstvenika iz Trevisa po imenu Giovanni Comisso (1895.-1969.). U svojim sjećanjima zapisao je kako je njegova baka Giuseppina, inače potomak grofa Odoarda Tiretta, bila zaljubljenica u tiramisu, ili kako ga je ona zvala, "Tirame-sospiro-sù", te ga je često zimi jela za večeru.
Sad kad znate cijelu priču - zapravo sve tri priče - preostaje vam samo napraviti tiramisu...

Tiramisu
Sastojci:
500 g mascarponea
300 g (oko 30) piškota
100 g šećera
300 ml espressa
4 srednje velika jaja
2 žlice vina marsala ili ruma
nezaslađeni kakao prah
Priprema:
Napravite kavu, dodajte joj vino ili rum.
Odvojiti bjelanjke od žumanjaka pa od bjelanjaka umutite čvrsti snijeg. Žumanjke tucite sa šećerom dok ne posvijetle, 3 do 5 minuta. Dodajte im mascarpone pa ga razradite žlicom ili vilicom, a zatim lagano miksajte ili tucite pjenjačom, 2 do 3 minute. U smjesu na kraju dodajte snijeg od bjelanjaka.
Ako ne želite kotistiti sirova jaja, žumanjke možete misati sa šećerom na vodenoj kupelji, a bjelanjke tucite s polovicom količine šećera, dok drugu polovicu treba kuhati s 25 ml vode (oko 2 žlice) dok se šećer ne rastopi pa zaim dodati bjelanjcima. Pripazite da ne kuhate sirup predugo, dovoljno je pričekati koji trenutak nakon što se pojave mjehurići i nipošto ne dozvoliti da se šećer počne karamelizirati. Imate li kuhinjski termometar, ciljajte temperaturu od 121 stupnja Celzija.
Nakon što ste dodali snijeg u smjesu sira i žumanjaka, miješajte drvenom kuhačom, odozdo prema gore. Polako miješajte dok ne postane glatko i kremasto.
Zatim umočite kekse u kavu, ne dulje od dvije sekunde, pa ih slažite u posudu u kojoj ćete raditi tiramisu. Zatim ih premažite slojem kreme, dodajte još jedan sloj keksa, a zatim novi sloj kreme te sve pospite kakaom u prahu.
Ostavite da odstoji najmanje tri sata u hladnjaku prije posluživanja, a još je bolje pripremiti ga dan ranije i ostaviti u hladnjaku preko noći.

Tiramisu je slavni talijanski desert od bogate kreme na bazi pomno žbačenih jaja, kremastog mascarponea, slatakste Marsale, keksa tipa savojardi, poznatih i kao piškote te kakao praha, koji spomenutim sastojcima pruža tako lijep okusni kontrast. Mnogi od nas znaju barem jedan recept za tiramisu, no malo tko zna zašto ta obožavana slastica nosi baš takvo, pomalo čudno ime. Znate li vi?
Ako govorite talijanski, možda ste ga već preveli - prijevod je jednostavan i doslovan, a značenje mu je "podigni me" - no znate li zbog čega je odabrana baš ta kombinacija riječi? Jer nije nimalo slučajna, a ako ćemo vjerovati jednoj od čak tri teorije o njegovom nastanku - i to onoj najskandaloznijoj - ne samo da nije slučajna nego je i sasvim opravdana
No zaustavimo se samo na trenutak na one dvije manje skandalozne, ali međusobno suprotstavljene teorije. Prema jednoj, izumitelj slavnog deserta je Ado Campeol, a mjesto na kojem je tiramisu nastao je Treviso, preciznije Campeolov restoran, Le Beccherie. Ova priča ne objašnjava zašto se slastica koja je osvojila svijet zove baš tiramisu, ali nudi pomalo neuvjerljiv razlog: sve se dogodilo pukom srećom.

Prema toj legendi, jer teško se oteti dojmu da nije ništa više od puke legende, jednog dana Campeolov kuhar Roberto Linguanotto slučajno je ispustio mascarpone u zdjelu s jajima i šećerom. Ma zamislite! I ne samo da je bio iznimno precizan nehotični strijelac, Roberto se odvažio umočiti prst u zdjelu i kušati. Okus mu se, eto, svidio pa je obavijestio gazdaricu Albu, Adovu suprugu, što se upravo dogodilo u kuhinji. Njih su se dvoje potom bacili na mudrovanje što bi se s tim spojem moglo napraviti pa su se dosjetili dodati mu kavom natopljene savojarde. I bi tiramisu.
Nije zabilježeno kad se točno odigrala ta sretna kulinarska nezgoda, no tiramisu se u Adovom restoranu na jelovniku našao 1972. godine i odmah je postao veliki hit, najprije u restoranu Le Beccherie, a potom u cijelom svijetu. Popularnost mu je, štoviše, postigla tolike razmjere da su u Talijanskoj akademiji kuhinje zaključili da ga je potrebno zaštititi. Stoga je na kraju certificiran, ponajprije u nastojanju da se spriječe po mišljenju purista skandalozne varijacije s jagodama i slatkim vrhnjem.

Suprotstavljena teorija proglašava kuhara po imenu Carminantonio Iannaccone tvorcem ovog deserta. Ne treba posebno isticati da je zapravo Carminantonio onaj koji se takvim proglasio. Unatoč tome, puno je onih koji mu vjeruju.
I - treća sreća - evo nas na teoriji koja ne samo da je najzanimljivija nego i najpikantnija, no ono što je najvažnije je da jedina daje objašnjenje neobičnog naziva. Prema toj priči, tiramisu je zapravo nastao u bordelima u Trevisu i to kao afrodizijak oko 1800. godine. Navodno ga je osmislila poduzetna madam iz jedne dobro posjećene kuće užitaka.
S ciljem podebljavanja prihoda, “siora” koja je vodila lokal odlučila je podebljati ponudu svog bordela desertom afrodizijačkih svojstava: mješavinom zaslađenih žbačenih jaja i slatkog vina, kakva se od davnina davala bolesnicima i djeci da ih malo "pokripi".

Vrlo oštroumno od nje, jer ne samo da su posjetitelji nakon konzumacije bili spremni na novu turu vragolija među plahtama, nego su imali običaj u gluho doba noći, prije nego bi se vratili svojim gospođama, pojesti još jednu porciju tiramiusa kako bi malo "došli sebi".
Priča o slatkoj Viagri iz bordela neimenovane "siore" dugo je ostala, iz razumljivih razloga, skrivena velom tajne, no tu i tamo procurilo bi poneko svjedočanstvo. Jednim od takvih smatra se isječak iz memoara književnika i znanstvenika iz Trevisa po imenu Giovanni Comisso (1895.-1969.). U svojim sjećanjima zapisao je kako je njegova baka Giuseppina, inače potomak grofa Odoarda Tiretta, bila zaljubljenica u tiramisu, ili kako ga je ona zvala, "Tirame-sospiro-sù", te ga je često zimi jela za večeru.
Sad kad znate cijelu priču - zapravo sve tri priče - preostaje vam samo napraviti tiramisu...

Tiramisu
Sastojci:
500 g mascarponea
300 g (oko 30) piškota
100 g šećera
300 ml espressa
4 srednje velika jaja
2 žlice vina marsala ili ruma
nezaslađeni kakao prah
Priprema:
Napravite kavu, dodajte joj vino ili rum.
Odvojiti bjelanjke od žumanjaka pa od bjelanjaka umutite čvrsti snijeg. Žumanjke tucite sa šećerom dok ne posvijetle, 3 do 5 minuta. Dodajte im mascarpone pa ga razradite žlicom ili vilicom, a zatim lagano miksajte ili tucite pjenjačom, 2 do 3 minute. U smjesu na kraju dodajte snijeg od bjelanjaka.
Ako ne želite kotistiti sirova jaja, žumanjke možete misati sa šećerom na vodenoj kupelji, a bjelanjke tucite s polovicom količine šećera, dok drugu polovicu treba kuhati s 25 ml vode (oko 2 žlice) dok se šećer ne rastopi pa zaim dodati bjelanjcima. Pripazite da ne kuhate sirup predugo, dovoljno je pričekati koji trenutak nakon što se pojave mjehurići i nipošto ne dozvoliti da se šećer počne karamelizirati. Imate li kuhinjski termometar, ciljajte temperaturu od 121 stupnja Celzija.
Nakon što ste dodali snijeg u smjesu sira i žumanjaka, miješajte drvenom kuhačom, odozdo prema gore. Polako miješajte dok ne postane glatko i kremasto.
Zatim umočite kekse u kavu, ne dulje od dvije sekunde, pa ih slažite u posudu u kojoj ćete raditi tiramisu. Zatim ih premažite slojem kreme, dodajte još jedan sloj keksa, a zatim novi sloj kreme te sve pospite kakaom u prahu.
Ostavite da odstoji najmanje tri sata u hladnjaku prije posluživanja, a još je bolje pripremiti ga dan ranije i ostaviti u hladnjaku preko noći.
