Lešo fažoleti savršen su ljetni primo piatto, prilog ili, lijepo ohlađeni i s kap kvasine, salata, no uživanje u njima lako nam mogu pokvariti 'končići' kojima obiluju mrvicu prezrele mahune. Ako ste ih baš počeli čistiti kad vam je postalo jasno da imaju spomenuti nedostatak, nemojte ih baciti, ali nemojte se ni nadati da će mrske niti nestati u kuhanju. Potrudite se i uklonite ih u tri koraka.

1. Uzmite mahunu u ruku i jedan vršak prelomite prema končastoj niti koja prolazi cijelom dužinom.

2. Odlomljeni vršak lagano povucite i podignite tako da se s njim odvoji i končić

3. Odlomite i drugi kraj i s njim uklonite eventialni ostatak niti.

Stručnjaci savjetuju da je očišćene fažolete najbolje kuhati u komadu, jer će tako bolje sačuvati okus. Iz istog razloga kuhaju se u maloj količini uzavrele, posoljene vode. Ako ih dodajte nekom jelu kao jedan od sastojaka (na primjer ako ih stavljate u minestrone), narežite ih na komade.

Pazite da se ne prekuhaju jer će postati gnjecave, a ako vam se čine da su nekako gumaste, znači da se nisu dovoljno kuhale. Želite li da budu hrskave, radije ih blanširajte pa ubacite u ledenu kupku.

Lešo fažoleti savršen su ljetni primo piatto, prilog ili, lijepo ohlađeni i s kap kvasine, salata, no uživanje u njima lako nam mogu pokvariti 'končići' kojima obiluju mrvicu prezrele mahune. Ako ste ih baš počeli čistiti kad vam je postalo jasno da imaju spomenuti nedostatak, nemojte ih baciti, ali nemojte se ni nadati da će mrske niti nestati u kuhanju. Potrudite se i uklonite ih u tri koraka.

1. Uzmite mahunu u ruku i jedan vršak prelomite prema končastoj niti koja prolazi cijelom dužinom.

2. Odlomljeni vršak lagano povucite i podignite tako da se s njim odvoji i končić

3. Odlomite i drugi kraj i s njim uklonite eventialni ostatak niti.

Stručnjaci savjetuju da je očišćene fažolete najbolje kuhati u komadu, jer će tako bolje sačuvati okus. Iz istog razloga kuhaju se u maloj količini uzavrele, posoljene vode. Ako ih dodajte nekom jelu kao jedan od sastojaka (na primjer ako ih stavljate u minestrone), narežite ih na komade.

Pazite da se ne prekuhaju jer će postati gnjecave, a ako vam se čine da su nekako gumaste, znači da se nisu dovoljno kuhale. Želite li da budu hrskave, radije ih blanširajte pa ubacite u ledenu kupku.
