Istraživači sa Sveučilišta Leeds otkrili su razlog zašto je jesti čokoladu tako dobro. Znanstvenici su ispitivali proces koji se odvija tijekom jela te su se više usredotočili na sastav nego na okus, piše bbc.com.

Otkrili su da masnoća koja se nalazi u čokoladi pomaže stvoriti glatkoću i užitak.

Dr. Siavash Soltanahmadi, vođa tima znanstvenika, nada se da će otkrića dovesti do razvoja "sljedeće generacije" zdravije čokolade.

Kada kocku stavite u usta, površinski dio otpušta sloj masnoće koji stvara onaj ugodan okus.

Istraživači su utvrdili da masnoće koje se nalaze dublje u čokoladi imaju manje značajnu ulogu te je stoga moguće smanjiti količinu tih masnoća bez gubitka okusa čokolade, a osjetila ostaju zadovoljna.

Profesorica Anwesha Sarkar sa School of Food Science and Nutrition u Leedsu kaže da je "mjesto masnoće tijekom izrade čokolade ono što je važno u procesu premazivanja i da je to rijetko bilo predmetom istraživanja".

"Naše istraživanje otvara mogućnost proizvođačima da inteligentnije dizajniraju tamnu čokoladu sa smanjenim ukupnim udjelom masti."

Tim je koristio umjetnu ‘3D površinu nalik jeziku‘ napravljenu na Sveučilištu u Leedsu za izvođenje studije, a istraživači se nadaju da se oprema može koristiti za testiranje drugih vrsta hrane kao što su sladoled, margarin i sir, piše bbc.com.

Dr. Siavash Soltanahmadi, vođa tima znanstvenika, nada se da će otkrića dovesti do razvoja "sljedeće generacije" zdravije čokolade.

Kada kocku stavite u usta, površinski dio otpušta sloj masnoće koji stvara onaj ugodan okus.

Istraživači su utvrdili da masnoće koje se nalaze dublje u čokoladi imaju manje značajnu ulogu te je stoga moguće smanjiti količinu tih masnoća bez gubitka okusa čokolade, a osjetila ostaju zadovoljna.

Istraživači sa Sveučilišta Leeds otkrili su razlog zašto je jesti čokoladu tako dobro. Znanstvenici su ispitivali proces koji se odvija tijekom jela te su se više usredotočili na sastav nego na okus, piše bbc.com.

Otkrili su da masnoća koja se nalazi u čokoladi pomaže stvoriti glatkoću i užitak.

Dr. Siavash Soltanahmadi, vođa tima znanstvenika, nada se da će otkrića dovesti do razvoja "sljedeće generacije" zdravije čokolade.

Kada kocku stavite u usta, površinski dio otpušta sloj masnoće koji stvara onaj ugodan okus.

Istraživači su utvrdili da masnoće koje se nalaze dublje u čokoladi imaju manje značajnu ulogu te je stoga moguće smanjiti količinu tih masnoća...
