U kosovskom mjestu Velika Kruša pri kraju je berba crvenih paprika u zemljoradničkoj zadruzi 'Kruša'. Vrijedne žene nakon branja paprika čiste ih kako bi se mogao početi pripremati tradicionalni ajvar. U ovo doba godine i stanovnici sela i gradova rade domaće zimnice te je paprika tražena ne samo po trgovinama i gradskim pazarima nego i po raznim Virtualnim pazarima kako bi se došlo do domaćeg proizvoda.

Ajvar je jedan od proizvoda koji ima zaista mnogobrojne verzije recepta. Slobodno bi se moglo reći kako skoro svaka kuharica ima neki svoj recept, pa tako neki peku paprike, drugi stavljaju češnjak, treći mrkvu, četvrti senf, peti ocat... Ajvar mnogi zovu kraljem zimnice, a bez njega gotovo ne može proći zima u kućanstvima.
Donosimo vam jedan od jednostavnijih recepata pa pokušajte i vi napraviti domaći ajvar.
SASTOJCI:
- 10 kg crvene paprike
- 3 velike balancane
- 5 dcl ulja
- sol po želji
- 1 velika žlica šećera
PRIPREMA:
Papriku ispecite u pećnici i odmah je nakon pečenja stavite u plastične vrećice na par minuta kako bi omekšala što će olakšati skidanje kore. Nakon što se malo paprike ohlade ogulite ih i očistite od sjemenki te stavite cijediti barem 2-3 sata.
S balancanama napravite isti postupak: pečenje, stavljanje u vrećicu, guljenje, cijeđenje.
Nakon cijeđenja paprike i balancane sameljite ih na ručnom aparatu za mljevenje mesa, te sve prebacite u veliki lonac i stavite na laganu vatru.

Tijekom kuhanja smjesu neprestano miješajte, a ulje postepeno dolivajte po 1 dcl svakih 20 minuta, miješajte neprestano jer ulje ne smije izbiti na površinu. Postoji način na koji se najlakše provjeri je li ajvar gotov: drvenom žlicom prijeđite po dnu lonca nakon čega se treba vidjeti dno lonca.
Sol i šećer dodajte pri samom kraju, zadnjih 20 minuta kuhanja. U međuvremenu dok se ajvar kuha, potrebno je pripremiti staklenke. Čiste staklenke zagrijte u pećnici na 50 stupnjeva i u njih sipajte ajvar dok je još topao. Na vrh svake napunjene staklenke stavite malo ulja i zatvorite poklopcem, te ih ostavite i prekrijte sa stolnjakom ili kuhinjskom krpom.
Staklenke ostavite prekrivene kako bi se postepeno hladile 24 sata, a zatim ih spremite na hladno i mračno mjesto do konzumacije.

Ajvar je jedan od proizvoda koji ima zaista mnogobrojne verzije recepta. Slobodno bi se moglo reći kako skoro svaka kuharica ima neki svoj recept, pa tako neki peku paprike, drugi stavljaju češnjak, treći mrkvu, četvrti senf, peti ocat... Ajvar mnogi zovu kraljem zimnice, a bez njega gotovo ne može proći zima u kućanstvima.
Donosimo vam jedan od jednostavnijih recepata pa pokušajte i vi napraviti domaći ajvar.
SASTOJCI:
- 10 kg crvene paprike
- 3 velike balancane
- 5 dcl ulja
- sol po želji
- 1 velika žlica šećera
PRIPREMA:
Papriku ispecite u pećnici i odmah je nakon pečenja stavite u plastične vrećice na par minuta kako bi omekšala što će olakšati skidanje kore. Nakon što se malo paprike ohlade ogulite ih i očistite od sjemenki te stavite cijediti barem 2-3 sata.
S balancanama napravite isti postupak: pečenje, stavljanje u vrećicu, guljenje, cijeđenje.
Nakon cijeđenja paprike i balancane sameljite ih na ručnom aparatu za mljevenje mesa, te sve prebacite u veliki lonac i stavite na laganu vatru.

Tijekom kuhanja smjesu neprestano miješajte, a ulje postepeno dolivajte po 1 dcl svakih 20 minuta, miješajte neprestano jer ulje ne smije izbiti na površinu. Postoji način na koji se najlakše provjeri je li ajvar gotov: drvenom žlicom prijeđite po dnu lonca nakon čega se treba vidjeti dno lonca.
Sol i šećer dodajte pri samom kraju, zadnjih 20 minuta kuhanja. U međuvremenu dok se ajvar kuha, potrebno je pripremiti staklenke. Čiste staklenke zagrijte u pećnici na 50 stupnjeva i u njih sipajte ajvar dok je još topao. Na vrh svake napunjene staklenke stavite malo ulja i zatvorite poklopcem, te ih ostavite i prekrijte sa stolnjakom ili kuhinjskom krpom.
Staklenke ostavite prekrivene kako bi se postepeno hladile 24 sata, a zatim ih spremite na hladno i mračno mjesto do konzumacije.
