Udruga stručnjaka u pekarstvu i slastičarstvu Richemont klub, koja okuplja 38 članova, na sjednici u četvrtak najavila je poskupljenje kruha od minimalno deset posto, ističući kako je to nužnost zbog povećanja cijena sirovina te energenata.

Kako je istaknuo direktor Richemonta Vladimir Bulić, cijena bijelog brašna (tip 550) prošle se godine u travnju i svibnju kretala od 1,6 do 1,95 kuna po kilogramu, dok se danas kreće od 2,7 do 3,3 kn/kg. U uvjetima rastuće cijene pšenice i brašna, nužno je i povećanje cijene kruha, rečeno je na sjednici.

Stanje u pekarstvu Bulić je ocijenio zabrinjavajućim, navodeći kako posluje sa stopom profitabilnosti od samo 1,4 posto, odnosno samo 30 posto cijene kruha i krušnih proizvoda ostaje proizvođaču, tj. ako bi kruh koštao 10 kn/kg, proizvođaču ostaje tri kune.

Bulić je iznio i podatke prema kojima se pekarstvom u Hrvatskoj bavi 1450 poslovnih subjekata, pekarski posao vrijedan je oko dvije milijarde kuna, velik postotak pekara posluje s gubitkom, a probleme stvara i veliki uvoz.

Veliki dio proizvodnje plasira se preko trgovačkih lanaca, a to poslovanje podrazumijeva 25-35 posto rabata, oko 25 posto povrata robe te 10 posto gubitka na kompenzacijama.

Udruga stručnjaka u pekarstvu i slastičarstvu Richemont klub, koja okuplja 38 članova, na sjednici u četvrtak najavila je poskupljenje kruha od minimalno deset posto, ističući kako je to nužnost zbog povećanja cijena sirovina te energenata.

Kako je istaknuo direktor Richemonta Vladimir Bulić, cijena bijelog brašna (tip 550) prošle se godine u travnju i svibnju kretala od 1,6 do 1,95 kuna po kilogramu, dok se danas kreće od 2,7 do 3,3 kn/kg. U uvjetima rastuće cijene pšenice i brašna, nužno je i povećanje cijene kruha, rečeno je na sjednici.

Stanje u pekarstvu Bulić je ocijenio zabrinjavajućim, navodeći kako posluje sa stopom profitabilnosti od samo 1,4 posto, odnosno samo 30 posto cijene kruha i krušnih proizvoda ostaje proizvođaču, tj. ako bi kruh koštao 10 kn/kg, proizvođaču ostaje tri kune.

Bulić je iznio i podatke prema kojima se pekarstvom u Hrvatskoj bavi 1450 poslovnih subjekata, pekarski posao vrijedan je oko dvije milijarde kuna, velik postotak pekara posluje s gubitkom, a probleme stvara i veliki uvoz.

Veliki dio proizvodnje plasira se preko trgovačkih lanaca, a to poslovanje podrazumijeva 25-35 posto rabata, oko 25 posto povrata robe te 10 posto gubitka na kompenzacijama.
