Kad jako volite sir, jaja i mlijeko, sukladno Murphyjevom zakonu dogodit će vam se da ih u nekom trenu više nećete smjeti jesti. Dobro, nećemo vam baš jamčiti da je tako, ali... Ne mora vas baš strefiti neka gadna intolerancija ili ne daj bože alergija, o gastritisu i refluksu da ne govorimo, može vam se, recimo, dogoditi da odlučite postati vegan. Ili se vjenčati s takvim, a ovu modernu djecu s tisuću prehrambenih prohtjeva da ne spominjemo... 

Šalu na stranu, jer onima koji moraju izbjegavati tako uobičajene namirnice kao što su jaja i mlijeko uopće nije lako. Mnoge su im fine stvari - poput, na primjer, finih vrućih slanih pita - potpuno nedostižne. A nema gdje ih nema. Ne može čovjek ući u najobičniji kvartovski dućan bez bliskog, a tako dalekog susreta sa zabranjenim voćem.

Za sve vas koji izbjegavate mlijeko i jaja, a još uvijek niste preboljeli goluzarije poput zeljanice, otkrivamo kako napraviti zeljanicu bez jaja i mlijeka.

Veganska zeljanica 

Sastojci:

500 g špinata
300 g svilenkastog tofua
25 g krušnih mrvica
15 gotovih kora za pite
5 stabljika mladog luka
2 zgnječena češnja češnjaka
3 žličice maslinovog ulja + još
1 1/2 žlica začinskog kvasca

Priprema:

Zagrijte pećnicu na 200°C, a veliki pleha obložite papirom za pečenje.

Zagrijte 2 žličice ulja u velikoj dubokoj tavi na srednje jakoj vatri pa pirjajte nasjeckani mladi luk i češnjak miješajući, 2-3 minute ili dok mladi luk ne omekša. Prebacite na tanjur.

Zagrijte preostalu žličicu ulja i dodajte četvrtinu špinata. Kuhajte, miješajući, 2 minute ili dok špinat ne uvene. Prebacite u veliku zdjelu. Ponovite, u još 3 serije, s preostalim špinatom, po potrebi dodajte još malo ulja. Ostavite špinat da se malo ohladi pa rukama iz njega iscijedite što više tekućine.

Ocijeđeni špinat pomiješajte s lukom, krušnim mrvicama i začinskim kvascem (on se dodaje da bi okus jela dobio okus sličan zrelom siru poput parmezana pa ga možete izostaviti ako ga ne nađete) te u smjesu dodajte svilenkasti tofu, dobro ocijeđen i izmrvljen.

Stavite listove tijesta na čistu radnu površinu. Pokrijte vlažnom kuhinjskom krpom. Prvi list poprskajte uljem, prekrijte ga drugim listom pa ga poprskajte te konačno stavite još jedan list i poprskajte ga uljem. Na tako pripremljene kore stavite petinu smjese od špinata duž 1 duljeg ruba hrpe, ostavljajući razmak od 3 cm na svakom kraju. Zarolajte pa zamotajte u kolut i stavite na sredinu pleha za pečenje. Ponovite s preostalim listovima tijesta i smjesom špinata kako biste napravili još 4 rolice. Složite rolice tako da se nastavljaju na onu prvu, kako biste dobili jednu veliku spiralu.

Pecite oko pola sata, odnosno dok pita ne uhvati lijepu boju.

Kad jako volite sir, jaja i mlijeko, sukladno Murphyjevom zakonu dogodit će vam se da ih u nekom trenu više nećete smjeti jesti. Dobro, nećemo vam baš jamčiti da je tako, ali... Ne mora vas baš strefiti neka gadna intolerancija ili ne daj bože alergija, o gastritisu i refluksu da ne govorimo, može vam se, recimo, dogoditi da odlučite postati vegan. Ili se vjenčati s takvim, a ovu modernu djecu s tisuću prehrambenih prohtjeva da ne spominjemo... 

Šalu na stranu, jer onima koji moraju izbjegavati tako uobičajene namirnice kao što su jaja i mlijeko uopće nije lako. Mnoge su im fine stvari - poput, na primjer, finih vrućih slanih pita - potpuno nedostižne. A nema gdje ih nema. Ne može čovjek ući u najobičniji kvartovski dućan bez bliskog, a tako dalekog susreta sa zabranjenim voćem.

Za sve vas koji izbjegavate mlijeko i jaja, a još uvijek niste preboljeli goluzarije poput zeljanice, otkrivamo kako napraviti zeljanicu bez jaja i mlijeka.

Veganska zeljanica 

Sastojci:

500 g špinata
300 g svilenkastog tofua
25 g krušnih mrvica
15 gotovih kora za pite
5 stabljika mladog luka
2 zgnječena češnja češnjaka
3 žličice maslinovog ulja + još
1 1/2 žlica začinskog kvasca

Priprema:

Zagrijte pećnicu na 200°C, a veliki pleha obložite papirom za pečenje.

Zagrijte 2 žličice ulja u velikoj dubokoj tavi na srednje jakoj vatri pa pirjajte nasjeckani mladi luk i češnjak miješajući, 2-3 minute ili dok mladi luk ne omekša. Prebacite na tanjur.

Zagrijte preostalu žličicu ulja i dodajte četvrtinu špinata. Kuhajte, miješajući, 2 minute ili dok špinat ne uvene. Prebacite u veliku zdjelu. Ponovite, u još 3 serije, s preostalim špinatom, po potrebi dodajte još malo ulja. Ostavite špinat da se malo ohladi pa rukama iz njega iscijedite što više tekućine.

Ocijeđeni špinat pomiješajte s lukom, krušnim mrvicama i začinskim kvascem (on se dodaje da bi okus jela dobio okus sličan zrelom siru poput parmezana pa ga možete izostaviti ako ga ne nađete) te u smjesu dodajte svilenkasti tofu, dobro ocijeđen i izmrvljen.

Stavite listove tijesta na čistu radnu površinu. Pokrijte vlažnom kuhinjskom krpom. Prvi list poprskajte uljem, prekrijte ga drugim listom pa ga poprskajte te konačno stavite još jedan list i poprskajte ga uljem. Na tako pripremljene kore stavite petinu smjese od špinata duž 1 duljeg ruba hrpe, ostavljajući razmak od 3 cm na svakom kraju. Zarolajte pa zamotajte u kolut i stavite na sredinu pleha za pečenje. Ponovite s preostalim listovima tijesta i smjesom špinata kako biste napravili još 4 rolice. Složite rolice tako da se nastavljaju na onu prvu, kako biste dobili jednu veliku spiralu.

Pecite oko pola sata, odnosno dok pita ne uhvati lijepu boju.
