Jeste li ikad čuli za neobičan desert poznat pod nazivom sultanova sarma? Izvorno se zove sultan sarmasi, nazivaju ga još i paša lokum, a karakterističan je po tome što je izrazito kremast: uopće nema tijesto, osim ako ćete po tijesto računati mrvice samljevenog keksa koje se koriste u nekim receptima za vanjski sloj kolača, dok drugi recepti umjesto keksa uključuju ribani kokos.
Volite li kremaste kolače, ovaj bi vam mogao postati najdraži. Osobito ako ga pripremite po receptu blogerice Maje Gojić, na čijem ćete Instagramu i blogu Mirisi iz Majine kuhinje pronaći nekoliko verzija ove fantastične, nježne slastice. Princip je isti, baš kao i krema, a mi se jednostavno nismo mogli odlučiti koji nam je draži...
Paša lokum (sultanova sarma)
Sastojci:
Crna krema:
600 ml mlijeka plus 200 ml
6 žlica kokosovog šećera (ili 5 žlica običnog šećera)
3 žlice kakaa
4 žlice gustina
1 žlica brašna
100 g crne čokolade
40 g maslaca
Crvena krema:
600 g višanja
300 ml vode
3 žlice kokosovog šećera
1 vrhom puna žlica brašna
1 vrhom puna žlica gustina
1 vrećica želatine
Bijela krema:
200 ml slatkog vrhnja
Podloga:
200 gr mljevenog keksa
Priprema:
Mljeveni keks stavite na lim za pečenje obložen papirom.
Dobro promiješajte 200 ml mlijeka sa šećerom, kakaom, brašnom i gustinom pa ubacite u uzavrelo mlijeko (600 ml) pa kuhajte 3-4 minute. Kad dobijete teksturu pudinga, maknite s vatre, dodajte čokoladu izlomljenu na kockice i maslac te mješajte dok se ne istope. Kremu prelijte preko keksa, brzo radeći jer se smjesa jako brzo zgusne. Ostavite 15 minuta na sobnoj temperaturi pa pospremite u hladnjak preko noći.
Višnje sa šećerom i vodom kuhajte 15 minuta pa smjesu izmiksajte. Vratite na štednjak, dodajte gustin i brašno te kuhajte dok se malo ne zgusne. Rastopite želatinu u vrućoj kremi i ostavite da se malo ohladi. Prelijete preko čokloadne kreme i ostavite da se malo ohladi pa spremite u hladnjak na barem 3-4 sata.
Istucite vrhnje u čvrsti šlag pa ga nanesite na hladnu koru. Rasjecite po dužoj strani na jednake trake i zarolajte ih.

Jeste li ikad čuli za neobičan desert poznat pod nazivom sultanova sarma? Izvorno se zove sultan sarmasi, nazivaju ga još i paša lokum, a karakterističan je po tome što je izrazito kremast: uopće nema tijesto, osim ako ćete po tijesto računati mrvice samljevenog keksa koje se koriste u nekim receptima za vanjski sloj kolača, dok drugi recepti umjesto keksa uključuju ribani kokos.
Volite li kremaste kolače, ovaj bi vam mogao postati najdraži. Osobito ako ga pripremite po receptu blogerice Maje Gojić, na čijem ćete Instagramu i blogu Mirisi iz Majine kuhinje pronaći nekoliko verzija ove fantastične, nježne slastice. Prenosimo vam Majin recept za paša lokum s višnjama, a u nastavku potražite i video za paša lokum s jagodama. Princip je isti, baš kao i krema, a mi se jednostavno nismo mogli odlučiti koji nam je draži...
Paša lokum (sultanova sarma)
Sastojci:
Crna krema:
600 ml mlijeka plus 200 ml
6 žlica kokosovog šećera (ili 5 žlica običnog šećera)
3 žlice kakaa
4 žlice gustina
1 žlica brašna
100 g crne čokolade
40 g maslaca
Crvena krema:
600 g višanja
300 ml vode
3 žlice kokosovog šećera
1 vrhom puna žlica brašna
1 vrhom puna žlica gustina
1 vrećica želatine
Bijela krema:
200 ml slatkog vrhnja
Podloga:
200 gr mljevenog keksa
Priprema:
Mljeveni keks stavite na lim za pečenje obložen papirom.
Dobro promiješajte 200 ml mlijeka sa šećerom, kakaom, brašnom i gustinom pa ubacite u uzavrelo mlijeko (600 ml) pa kuhajte 3-4 minute. Kad dobijete teksturu pudinga, maknite s vatre, dodajte čokoladu izlomljenu na kockice i maslac te mješajte dok se ne istope. Kremu prelijte preko keksa, brzo radeći jer se smjesa jako brzo zgusne. Ostavite 15 minuta na sobnoj temperaturi pa pospremite u hladnjak preko noći.
Višnje sa šećerom i vodom kuhajte 15 minuta pa smjesu izmiksajte. Vratite na štednjak, dodajte gustin i brašno te kuhajte dok se malo ne zgusne. Rastopite želatinu u vrućoj kremi i ostavite da se malo ohladi. Prelijete preko čokloadne kreme i ostavite da se malo ohladi pa spremite u hladnjak na barem 3-4 sata.
Istucite vrhnje u čvrsti šlag pa ga nanesite na hladnu koru. Rasjecite po dužoj strani na jednake trake i zarolajte ih.
