Većina recepata za slana jela započinje riječima "nasjeckajte luk pa ga ispirjajte". Shodno tome, bilo bi za očekivati da je pirjanje luka jedna od stvari koje smo svi svladali već u prvim kuharskim koracima. Nažalost, nije.

Ispirjati luk bez da zagori trebalo bi biti lako, no svima nam se dogodi da umjesto s lukom fine, karamelizirane arome i ugodne boje završimo s tećom pocrnjelog dna koju je prava muka ribati. Dogodi li vam se ovo i češće nego s vremena na vrijeme, trebali biste se zapitati u čemu griješite jer zagoreni luk nije samo muka za čišćenje, nego je i poprilično nezdrav - ako takvog jedete relativno često, mogli biste osjetiti neželjene posljedice po probavni sustav.

Prije nego preispitate tehniku, provjerite pirjate li u odgovarajućem posuđu. Nužno je da tave i lonci u kojima pirjate luk budu debljeg dna, jer se u takvima toplina bolje raspoređuje pa se neće tako lako dogoditi da je jedan dio zagrijan jače od drugog, što bi vas moglo neugodno iznenaditi.

Teće i lonci s neprijanjajućim dnom su dobra opcija, ali samo donekle: ako vam za određeno jelo treba lijepo karameliziran, a ne samo omekšan i "zažućen" luk, bolje je uzeti posuđe bez sloja koji sprječava prijanjanje. Ako vam je takvo posuđe jedina opcija, pomoći će ako ga najprije dobro zagrijete, pa tek onda dodate ulje i na kraju luk.

Evo nas i na drugoj stavci, a ta se tiče temperature. Ovisno o onome što želite postići, za ispirjati luk trebat će vam umjerena ili tiha vatra. Umjerena je prikladna za klasično dinstanje do zlatnožute boje, dok se karameliziranje radi na nižoj vatri uz puno više strpljenja.

Stavka tri se odnosi na masnoću. Još uvijek traje debata oko kuhanja na maslinovom ulju, a naš je stav, ako vas zanima, da je ta vrsta ulja itekako prihvatljiva za ovu svrhu. Istina, ekstradjevičansko maslinovo ulje nije najbolja opcija za friganje (za tu je namjenu bolje obično maslinovo, a dobra su i neka druga ulja, o tome smo vam već pisali) no pri pirjanju nema opasnosti da će se premašiti temperaturna točka u kojoj se ulje počinje dimiti.

Jeste li primijetili što nismo spomenuli? Miješanje. A ono je ključno za uspjeh i mora biti često.

Većina recepata za slana jela započinje riječima "nasjeckajte luk pa ga ispirjajte". Shodno tome, bilo bi za očekivati da je pirjanje luka jedna od stvari koje smo svi svladali već u prvim kuharskim koracima. Nažalost, nije.

Ispirjati luk bez da zagori trebalo bi biti lako, no svima nam se dogodi da umjesto s lukom fine, karamelizirane arome i ugodne boje završimo s tećom pocrnjelog dna koju je prava muka ribati. Dogodi li vam se ovo i češće nego s vremena na vrijeme, trebali biste se zapitati u čemu griješite jer zagoreni luk nije samo muka za čišćenje, nego je i poprilično nezdrav - ako takvog jedete relativno često, mogli biste osjetiti neželjene posljedice po probavni sustav.

Prije nego preispitate tehniku, provjerite pirjate li u odgovarajućem posuđu. Nužno je da tave i lonci u kojima pirjate luk budu debljeg dna, jer se u takvima toplina bolje raspoređuje pa se neće tako lako dogoditi da je jedan dio zagrijan jače od drugog, što bi vas moglo neugodno iznenaditi.

Teće i lonci s neprijanjajućim dnom su dobra opcija, ali samo donekle: ako vam za određeno jelo treba lijepo karameliziran, a ne samo omekšan i "zažućen" luk, bolje je uzeti posuđe bez sloja koji sprječava prijanjanje. Ako vam je takvo posuđe jedina opcija, pomoći će ako ga najprije dobro zagrijete, pa tek onda dodate ulje i na kraju luk.

Evo nas i na drugoj stavci, a ta se tiče temperature. Ovisno o onome što želite postići, za ispirjati luk trebat će vam umjerena ili tiha vatra. Umjerena je prikladna za klasično dinstanje do zlatnožute boje, dok se karameliziranje radi na nižoj vatri uz puno više strpljenja.

Stavka tri se odnosi na masnoću. Još uvijek traje debata oko kuhanja na maslinovom ulju, a naš je stav, ako vas zanima, da je ta vrsta ulja itekako prihvatljiva za ovu svrhu. Istina, ekstradjevičansko maslinovo ulje nije najbolja opcija za friganje (za tu je namjenu bolje obično maslinovo, a dobra su i neka druga ulja, o tome smo vam već pisali) no pri pirjanju nema opasnosti da će se premašiti temperaturna točka u kojoj se ulje počinje dimiti.

Jeste li primijetili što nismo spomenuli? Miješanje. A ono je ključno za uspjeh i mora biti često.
