Ima li što tipičnije za laganu dalmatinsku spizu od lešo blitve? Teško. Oko nje nema puno gnjavaže, a možete ju jesti kao samostalan obrok, kao prilog ili kao primo piatto. Nedavno smo vam pisali koliko je zdrava pa vam svi oni izgovori u stilu "Ajme ko će je čistit" stvarno nemaju smisla, a spomenuli smo vam i veliku grešku koju mnogi rade kad je kuhaju. Da vas podsjetimo, blitvu se ne smije prekuhati, jer će izgubiti veliku većinu svojih hranjivih sastojaka zbog kojih je mnogi, poput poznatog nutricionista Georgea Mateljana, svrstavaju među nazdravije namirnice na svijetu.

Evo vam i par riječi iz gurmanske perspektive, a upućene su svima koji kaću da je blitva lešo "bezveze". Takvi ju naprosto ne znaju skuhati kako treba. Ali to se da lako ispraviti.

Za početak, evo kako kupiti najbolju blitvu. Bilo da je kupujete na pazaru (za što zdušno navijamo) ili u samoposluzi, obratite pozornost na nekoliko stvari: listovi trebaju biti tamnozelene boje, osim ako je riječ o sasvim mladoj blitvi, bez vidljivih oštećenja i naznaka da je blitva počela venuti. Stabljika bi, bez obzira je li riječ o sortama s bijelom stabljikom ili onima sa crvenkastom,  trebala biti čvrsta i bez smeđih dijelova na mjestu gdje je odrezana, jer to je znak da nije friško ubrana.

Kad je očistite i spremni ste za kuhanje, dobro omjerite količinu krumpira  - ako ih stavite previše, to baš neće biti to, a lako je pretjerati jer blitva, osobito ako je mlada, za vrijeme kuhanja znatno gubi na volumenu. Ako imate posla s blitvom debele stabljike, odrežite je i ubacite u vodu s krumpirima, a listove dodajte tek kad su stabljike i krumpira već napola skuhani. Tako ćete izbjeći prekuhavanje pa vam konačan rezultat neće biti bljutav. Ako imate mladu blitvu tanke stabljike, tada ju ne trebate odvajati od stabljike već ju cijelu ubacite u lonac kad je krumpir napola skuhan.

Da bi vam blitva bila što ukusnija, dodat ćete joj, nakon što je kuhana i ocijeđena od viška vode, što kvalitetnije maslinovo ulje, a nećete pogriješiti ni s malo češnjaka. Onima koji loše podnose češnjak savjetujemo da ga ubace čim je blitva ocijeđena pa će od topline svenuti, a možete ga, također, kratko zagrijati u maslinovom ulju pa odstraniti nakon što je ulju predalo svoju aromu. Kad kuhate stariju blitvu, možete joj  na kraju, kad je skuhana i začinjena, dodati i malo tanko narezanog luka, a jedna od najboljih stvari za začiniti blitvu je šalša od poma ili, još bolje, šug iz brujeta - vjerujte, baš se "ljube"!

Ima li što tipičnije za laganu dalmatinsku spizu od lešo blitve? Teško. Oko nje nema puno gnjavaže, a možete ju jesti kao samostalan obrok, kao prilog ili kao primo piatto. Nedavno smo vam pisali koliko je zdrava pa vam svi oni izgovori u stilu "Ajme ko će je čistit" stvarno nemaju smisla, a spomenuli smo vam i veliku grešku koju mnogi rade kad je kuhaju. Da vas podsjetimo, blitvu se ne smije prekuhati, jer će izgubiti veliku većinu svojih hranjivih sastojaka zbog kojih je mnogi, poput poznatog nutricionista Georgea Mateljana, svrstavaju među nazdravije namirnice na svijetu.

Evo vam i par riječi iz gurmanske perspektive, a upućene su svima koji kaću da je blitva lešo "bezveze". Takvi ju naprosto ne znaju skuhati kako treba. Ali to se da lako ispraviti.

Za početak, evo kako kupiti najbolju blitvu. Bilo da je kupujete na pazaru (za što zdušno navijamo) ili u samoposluzi, obratite pozornost na nekoliko stvari: listovi trebaju biti tamnozelene boje, osim ako je riječ o sasvim mladoj blitvi, bez vidljivih oštećenja i naznaka da je blitva počela venuti. Stabljika bi, bez obzira je li riječ o sortama s bijelom stabljikom ili onima sa crvenkastom,  trebala biti čvrsta i bez smeđih dijelova na mjestu gdje je odrezana, jer to je znak da nije friško ubrana.

Kad je očistite i spremni ste za kuhanje, dobro omjerite količinu krumpira  - ako ih stavite previše, to baš neće biti to, a lako je pretjerati jer blitva, osobito ako je mlada, za vrijeme kuhanja znatno gubi na volumenu. Ako imate posla s blitvom debele stabljike, odrežite je i ubacite u vodu s krumpirima, a listove dodajte tek kad su stabljike i krumpira već napola skuhani. Tako ćete izbjeći prekuhavanje pa vam konačan rezultat neće biti bljutav. Ako imate mladu blitvu tanke stabljike, tada ju ne trebate odvajati od stabljike već ju cijelu ubacite u lonac kad je krumpir napola skuhan.

Da bi vam blitva bila što ukusnija, dodat ćete joj, nakon što je kuhana i ocijeđena od viška vode, što kvalitetnije maslinovo ulje, a nećete pogriješiti ni s malo češnjaka. Onima koji loše podnose češnjak savjetujemo da ga ubace čim je blitva ocijeđena pa će od topline svenuti, a možete ga, također, kratko zagrijati u maslinovom ulju pa odstraniti nakon što je ulju predalo svoju aromu. Kad kuhate stariju blitvu, možete joj  na kraju, kad je skuhana i začinjena, dodati i malo tanko narezanog luka, a jedna od najboljih stvari za začiniti blitvu je šalša od poma ili, još bolje, šug iz brujeta - vjerujte, baš se "ljube"!
