Sutra je Dan jabuka, ako slučajno niste znali, a sasvim je izvjesno da niste jer je riječ o datumu koji se obilježava prvenstveno u Ujedinjenom kraljevstvu i to proslavama i sajmovima na kojima se kušaju različite sorte jabuka, uvježbava priprema jela s tim voćem i uživa u zabavnim igrama i kvizovima koji na ovaj ili onaj način imaju veze s jabukom. Nismo u Ujedinjenom kraljevstvu, ali ljubitelji ove slasne voćke sigurno će ovu informaciju uvažiti kao razlog za pripremiti kakvu zgodnu slasticu s tim sezonskim plodom u glavnoj ulozi.
Prije nego odaberete koju ćete točno od slastica za koje u nastavku donosimo recepte pripremiti, evo vam savjet-dva o tome kako odabrati optimalnu sortu jabuka jer nije svejedno koje ćete peći, koje kuhati, a koje pirjati. Uzmite u obzir da je za deserte uvijek bolje odabrati pomalo trpke ili kiselkaste sorte, jer ćete im ionako dodati šećer ili drugi zaslađivač, a ako želite postići posebno dubok i zaokružen okus, najbolje je kombinirati više sorti različitih okusnih profila.

Kad pečete pitu od jabuka, najbolje je kombinirati slatke i kisele sorte, a sa sortama braeburn, golden delicious, jonagold, granny smith i pink lady nećete pogriješiti. Tradicionalni šrudel od jabuka
Sastojci
250 g brašna
125 ml mlake vode
3 žlice ulja
malo soli
1500 g jabuka
100 g badema
100 g krušnih mrvica
130 g šećera
75 g grožđica
1 vanilin šećer
2 žličice cimeta
šećer u prahu za posipanje
Priprema:
Stavite grožđice da se namoče u toploj vodi.
Na radnu površinu istresite brašno, u hrpici napravite rupu i u nju ulijte ulje, vodu i dodajte sol. Mijesite tijesto dok ne postane elastično i glatko. Pokrijte ga plastičnom folijom ili zdjelom i ostavite da počiva oko pola sata.
Za to vrijeme ogulite jabuke, narežite ih tanko te im dodajte prezlu, namočene grožđice, nasjeckane bademe, šećer, vanilin šećer i cimet. Prezlu možete prethodno prepržiti na malo maslaca, a bademe tostirati.
Tijesto podijelite na četiri komada pa na pobrašnjenom stolnjaku svaki razvaljajte vrlo tanko. Premažite tijesto uljem pa ga razvucite rukama što je tanje moguće. Kad počne pucati, pustite ga da se malo odmori pa nastavite kasnije.
Dobro razvučeno tijesto ostavite da se malo prosuši pa ga nadjenite pripremljenom smjesom od jabuka i zarolajte. Štruce poslažite u posudu premazanu uljem i pecite oko sat vremena na 200°C, po želji povremeno premazujući štrudel rastopljenim maslacem. Ohlađeno pospite šećerom u prahu.

Slatki složenac od jabuka
Sastojci:
450 g jabuka
5 ml soka od limuna
¼ mahune vanilije
25 g šećera
30 ml vode
30 g maslaca
60 g krušnih mrvica
25 g šećera
100 ml slatkog vrhnja
1 vanilin šećer
Priprema:
Jabuke ogulite, izvadite im sredinu i narežite ih na komade pa ih stavite u lonac s vodom i 25 g šećera. Razdvojite mahunu vanilije uzduž jedne strane da se otvori, zatim ostružite sjemenke i dodajte ih u lonac s jabukama te sve kuhajte na sredne jakoj vatri. Povremeno promiješajte, a nakon što uzavre kuhajte 5-10 minuta, dok jabuke ne omekšaju. Jabuke po želji možete usitniti vilicom u kašu ili ih možete ostaviti u komadićima.
Za mrvice rastopite maslac u tavi na srednje jakoj vatri i kada se otopi dodajte mu krušne mrvice i šećer. Kuhajte par minuta uz redovito miješanje da se sve dobro sjedini. Mrvice bi trebale biti hrskave, ali pazite da ne zagore. Maknite s vatre.
Slatko vrhnje i vanilin šećer istucite u šlag pa jabuke, šlag i mrvice slojevito rasporedite u zdjelice za posluživanje. Za još bolji rezultat umjesto krušnih mrvica koristite izmrvljene kekse, ali u tom slučaju im za vrijeme prženja na maslacu ne trebate dodati šećer.

Starinska pita od jabuka
Sastojci:
5-6 većih jabuka
300 g oštrog brasna
100 g šećera
150 g maslaca
1 prašak za pecivo
2 žumanjka
50 ml mlijeka
1 žlica kiselog vrhnja
malo soli
cimet
korica neprskanog limuna
šećer u prahu za posipanje
Priprema:
Za tijesto pomiješajte brašno, šećer, prašak za pecivo i sol pa im dodajte ostale sastojke (osim jabuka, cimeta i šećera u prahu) te izradite kompaktno tijesto. Bitno je da su svi sastojci što hladniji.
Podijelite tijesto u dva jednaka dijela, zamotajte ih prozirnom folijom i pustite da malo odmori na hladnom.
Za nadjev naribajte jabuke i pustite ih da malo omekšaju te ih dobro ocijedite od soka.
Na pobrašnjenoj podlozi razvaljajte svaki komad tijesta na veličinu kalupa za pečenje. Jedan dio pažljivo prebacite na masnim papirom obložen kalup, izbockajte vilicom pa po njemu rasporedite jabuke začinjene cimetom.
Preko svega stavite drugi dio tijesta, lagano lagano utisnite pa pitu pecite na 180 stupnjeva 30-40 minuta.
Ohlađeni kolač pospite šećerom u prahu.

Sutra je Dan jabuka, ako slučajno niste znali, a sasvim je izvjesno da niste jer je riječ o datumu koji se obilježava prvenstveno u Ujedinjenom kraljevstvu i to proslavama i sajmovima na kojima se kušaju različite sorte jabuka, uvježbava priprema jela s tim voćem i uživa u zabavnim igrama i kvizovima koji na ovaj ili onaj način imaju veze s jabukom. Nismo u Ujedinjenom kraljevstvu, ali ljubitelji ove slasne voćke sigurno će ovu informaciju uvažiti kao razlog za pripremiti kakvu zgodnu slasticu s tim sezonskim plodom u glavnoj ulozi.
Prije nego odaberete koju ćete točno od slastica za koje u nastavku donosimo recepte pripremiti, evo vam savjet-dva o tome kako odabrati optimalnu sortu jabuka jer nije svejedno koje ćete peći, koje kuhati, a koje pirjati. Uzmite u obzir da je za deserte uvijek bolje odabrati pomalo trpke ili kiselkaste sorte, jer ćete im ionako dodati šećer ili drugi zaslađivač, a ako želite postići posebno dubok i zaokružen okus, najbolje je kombinirati više sorti različitih okusnih profila.

Kad pečete pitu od jabuka, najbolje je kombinirati slatke i kisele sorte, a sa sortama braeburn, golden delicious, jonagold, granny smith i pink lady nećete pogriješiti. Tradicionalni šrudel od jabuka
Sastojci
250 g brašna
125 ml mlake vode
3 žlice ulja
malo soli
1500 g jabuka
100 g badema
100 g krušnih mrvica
130 g šećera
75 g grožđica
1 vanilin šećer
2 žličice cimeta
šećer u prahu za posipanje
Priprema:
Stavite grožđice da se namoče u toploj vodi.
Na radnu površinu istresite brašno, u hrpici napravite rupu i u nju ulijte ulje, vodu i dodajte sol. Mijesite tijesto dok ne postane elastično i glatko. Pokrijte ga plastičnom folijom ili zdjelom i ostavite da počiva oko pola sata.
Za to vrijeme ogulite jabuke, narežite ih tanko te im dodajte prezlu, namočene grožđice, nasjeckane bademe, šećer, vanilin šećer i cimet. Prezlu možete prethodno prepržiti na malo maslaca, a bademe tostirati.
Tijesto podijelite na četiri komada pa na pobrašnjenom stolnjaku svaki razvaljajte vrlo tanko. Premažite tijesto uljem pa ga razvucite rukama što je tanje moguće. Kad počne pucati, pustite ga da se malo odmori pa nastavite kasnije.
Dobro razvučeno tijesto ostavite da se malo prosuši pa ga nadjenite pripremljenom smjesom od jabuka i zarolajte. Štruce poslažite u posudu premazanu uljem i pecite oko sat vremena na 200°C, po želji povremeno premazujući štrudel rastopljenim maslacem. Ohlađeno pospite šećerom u prahu.

Slatki složenac od jabuka
Sastojci:
450 g jabuka
5 ml soka od limuna
¼ mahune vanilije
25 g šećera
30 ml vode
30 g maslaca
60 g krušnih mrvica
25 g šećera
100 ml slatkog vrhnja
1 vanilin šećer
Priprema:
Jabuke ogulite, izvadite im sredinu i narežite ih na komade pa ih stavite u lonac s vodom i 25 g šećera. Razdvojite mahunu vanilije uzduž jedne strane da se otvori, zatim ostružite sjemenke i dodajte ih u lonac s jabukama te sve kuhajte na sredne jakoj vatri. Povremeno promiješajte, a nakon što uzavre kuhajte 5-10 minuta, dok jabuke ne omekšaju. Jabuke po želji možete usitniti vilicom u kašu ili ih možete ostaviti u komadićima.
Za mrvice rastopite maslac u tavi na srednje jakoj vatri i kada se otopi dodajte mu krušne mrvice i šećer. Kuhajte par minuta uz redovito miješanje da se sve dobro sjedini. Mrvice bi trebale biti hrskave, ali pazite da ne zagore. Maknite s vatre.
Slatko vrhnje i vanilin šećer istucite u šlag pa jabuke, šlag i mrvice slojevito rasporedite u zdjelice za posluživanje. Za još bolji rezultat umjesto krušnih mrvica koristite izmrvljene kekse, ali u tom slučaju im za vrijeme prženja na maslacu ne trebate dodati šećer.

Starinska pita od jabuka
Sastojci:
5-6 većih jabuka
300 g oštrog brasna
100 g šećera
150 g maslaca
1 prašak za pecivo
2 žumanjka
50 ml mlijeka
1 žlica kiselog vrhnja
malo soli
cimet
korica neprskanog limuna
šećer u prahu za posipanje
Priprema:
Za tijesto pomiješajte brašno, šećer, prašak za pecivo i sol pa im dodajte ostale sastojke (osim jabuka, cimeta i šećera u prahu) te izradite kompaktno tijesto. Bitno je da su svi sastojci što hladniji.
Podijelite tijesto u dva jednaka dijela, zamotajte ih prozirnom folijom i pustite da malo odmori na hladnom.
Za nadjev naribajte jabuke i pustite ih da malo omekšaju te ih dobro ocijedite od soka.
Na pobrašnjenoj podlozi razvaljajte svaki komad tijesta na veličinu kalupa za pečenje. Jedan dio pažljivo prebacite na masnim papirom obložen kalup, izbockajte vilicom pa po njemu rasporedite jabuke začinjene cimetom.
Preko svega stavite drugi dio tijesta, lagano lagano utisnite pa pitu pecite na 180 stupnjeva 30-40 minuta.
Ohlađeni kolač pospite šećerom u prahu.
