Jeste li ikad do sad čuli za jelo koje se naziva požarski odrezak ili odrezak požarski? A ono što joj je otkrio bilo je kako od usitnjene teletine, piletine ili ribe, zavisi kojoj verziji priče vjerujete, napraviti finu pljeskavicu koju potom treba panirati i ispržiti. Jelo je uskoro postalo hit u ponudi u to doba uspješne gostionice u koju su navraćale i slavne osobe tog vremena. Oduševljeni slasnim odreskom, preporučivali su ga prijateljima (sačuvano je pismo u kojem ga hvali Aleksandar Puškin), a neki su ga, poput Théophilea Gautiera, spomenuli u svojim djelima.

Kroz povijest je zabilježeno više varijanti jela, jer našlo se u brojnim kuharicama, a danas se pod odrskom požarski obično podrazumijeva korištenje piletine. Zgodna je caka što se piletini prije formiranja odrezaka dodaju ohlađeni komadići maslaca koji se za vrijeme pečenja tope dajući jelu sočnost. Ako je to bila caka koju je neimenovani siromašni Francuz otkrio ruskoj kuharici, nadamo se da mu je ponudila nešto više od jednog noćenja i skromnog obroka.
Još jedna posebnost ovog jela je što se, ako se priprema na tradicionalan način, odresci umjesto u brašno, jaja i krušne mrvice uvaljaju u sitno narezani kruh, što mu daje poseban, karakterističan izgled.

Požarski odrezak
Sastojci:
400 g pilećeg mesa
300 g kruha
200 g luka
100 g bijelog kruha
100 ml 20% vrhnja
80 g maslaca
otopljeni maslac za prženje
sol, papar
Priprema:
U vrhnju namočite 100 g kruha, ostatku skinite koru pa ga narežite na sitne kockice i stavite sa strane.
Na maslacu prodinstajte luk pa ga ohladite i sameljite s mesom i kruhom.
Narežite dobro ohlađen maslac na komadiće ili ga krupno naribajte pa ga dodajte u mljeveno meso. Smjesu stavite u hladnjak da se dobro ohladi.
Kad se smjesa ohladila, rukama oblikujte kotlete, uvaljajte ih u kockice kruha pa ih pržite u dobro zagrijanom otopljenom maslacu.
Čim kotleti dobiju zlatnu boju, stavite ih na 15 minuta u pećnicu zagrijanu na 200 stupnjeva Celzija.

Jeste li ikad do sad čuli za jelo koje se naziva požarski odrezak ili odrezak požarski? Možda bi ga bilo najpravednije pisati odrezak Pozharsky (izvorno Pozharskaya kotleta) jer naziv ne duguje posljedicama igranja sa šibicama nego ruskoj familiji Pozharsky. Ne, kako neki misle, onoj iz koje potječe nekoć vrlo borben princ Dmitry, nego onoj koja je polovicom pretprošlog stoljeća držala restoran u kojem je jelo izmišljeno. Legenda glasi da ga je kuharici otkrio siromašni Francuz u zamjenu za besplatno noćenje i obrok.
A ono što joj je otkrio bilo je kako od usitnjene teletine, piletine ili ribe, zavisi kojoj verziji priče vjerujete, napraviti finu pljeskavicu koju potom treba panirati i ispržiti. Jelo je uskoro postalo hit u ponudi u to doba uspješne gostionice u koju su navraćale i slavne osobe tog vremena. Oduševljeni slasnim odreskom, preporučivali su ga prijateljima (sačuvano je pismo u kojem ga hvali Aleksandar Puškin), a neki su ga, poput Théophilea Gautiera, spomenuli u svojim djelima.

Kroz povijest je zabilježeno više varijanti jela, jer našlo se u brojnim kuharicama, a danas se pod odrskom požarski obično podrazumijeva korištenje piletine. Zgodna je caka što se piletini prije formiranja odrezaka dodaju ohlađeni komadići maslaca koji se za vrijeme pečenja tope dajući jelu sočnost. Ako je to bila caka koju je neimenovani siromašni Francuz otkrio ruskoj kuharici, nadamo se da mu je ponudila nešto više od jednog noćenja i skromnog obroka.
Još jedna posebnost ovog jela je što se, ako se priprema na tradicionalan način, odresci umjesto u brašno, jaja i krušne mrvice uvaljaju u sitno narezani kruh, što mu daje poseban, karakterističan izgled.

Požarski odrezak
Sastojci:
400 g pilećeg mesa
300 g kruha
200 g luka
100 g bijelog kruha
100 ml 20% vrhnja
80 g maslaca
otopljeni maslac za prženje
sol, papar
Priprema:
U vrhnju namočite 100 g kruha, ostatku skinite koru pa ga narežite na sitne kockice i stavite sa strane.
Na maslacu prodinstajte luk pa ga ohladite i sameljite s mesom i kruhom.
Narežite dobro ohlađen maslac na komadiće ili ga krupno naribajte pa ga dodajte u mljeveno meso. Smjesu stavite u hladnjak da se dobro ohladi.
Kad se smjesa ohladila, rukama oblikujte kotlete, uvaljajte ih u kockice kruha pa ih pržite u dobro zagrijanom otopljenom maslacu.
Čim kotleti dobiju zlatnu boju, stavite ih na 15 minuta u pećnicu zagrijanu na 200 stupnjeva Celzija.
