Tiramisu svi vole, ali neki ga više vole u osvježavajućem izdanju - s okusom limuna. Želite li najbolji tiramisu od limuna, jasno je da će vam trebati popularni talijanski liker limoncello, no to nije sve...
Tajna apsolutno najboljeg osvježavajućeg tiramisua krije se u kristaliziranim limunima. To bi bilo nešto nalik na naše arancine i priprema se jednostavno, no morat ćete se potruditi nabaviti domaće limune. Sačuvat ćete i sirup koji nastaje pripremom karameliziranih limuna, a poslužit će vam za miješanje s limoncellom u najbolji umak za umakanje piškota koji ste okusili.
Za ovakav tiramisu potrebno je malo više truda no za druge vrste, ali svaka minita se isplati. Svi će vas pitati kako vam je ispao tako dobro...
Tiramisu s limunom
Sastojci:
Za kristalizirane limune:
3-4 limuna
250 ml vode
250 grama šećera
Krema:
400 g mascarponea
70 g šećera
250 ml slatkog vrhnja
50 ml limoncella
4 žumanjka
2 limuna
Dodatno:
20 piškota
korica i kriške limuna za ukras
Priprema:
Limun narežite na tanke kriške, a zatim ga uronite u kipuću vodu na otprilike jednu minutu i ocijedite. U posebnoj posudi zagrijte šećer i vodu. Kad zavrije, dodajte kriške limuna i kuhajte na laganoj vatri oko 30 do 40 minuta. Ocijedite, ostavite da se ohladi i sitno nasjeckajte. Sirup sačuvajte.
Naribajte koru 1 limuna i dodajte mu šećer pa dobro protrljajte prstima kako bi se oslobodio miris limuna. Toj mješavini dodajte žumanjke pa miksajte dok smjesa ne posvijetli. Dodajte mascarpone, malo limoncella i blendajte da dobijete glatku i homogenu smjesu. Istucite slatko vrhnje u šlag pa ga nježno umiješajte u smjesu s mascarponeom.
Pripremite tekućinu za namakanje kolačića tako što ćete pomiješati sok od 2 limuna, 2 žličice sirupa od limuna koji ste dobili kuhanjem i dobru dozu limoncella (prilagodite svom ukusu). U smjesu umočite kekse i slažite ih na dno kalupa. Ulijte mascarpone kremu i razmažite je špatulom. Pospite kandiranim komadićima limuna, a preko njih posložite namočene piškote. Ponavljajte postupak dok sve ne potrošite, s tim da trebate završiti slojem kreme.
Pospremite u hladnjak da se stisne barem četiri sata, a najbolje preko noći. Ukrasite kriškama i koricom limuna.

Sačuvat ćete i sirup koji nastaje pripremom karameliziranih limuna, a poslužit će vam za miješanje s limoncellom u najbolji umak za umakanje piškota koji ste okusili.
Za ovakav tiramisu potrebno je malo više truda no za druge vrste, ali svaka minita se isplati. Svi će vas pitati kako vam je ispao tako dobro...
Tiramisu s limunom
Sastojci:
Za kristalizirane limune:
3-4 limuna
250 ml vode
250 grama šećera
Krema:
400 g mascarponea
70 g šećera
250 ml slatkog vrhnja
50 ml limoncella
4 žumanjka
2 limuna
Dodatno:
20 piškota
korica i kriške limuna za ukras
Priprema:
Limun narežite na tanke kriške, a zatim ga uronite u kipuću vodu na otprilike jednu minutu i ocijedite. U posebnoj posudi zagrijte šećer i vodu. Kad zavrije, dodajte kriške limuna i kuhajte na laganoj vatri oko 30 do 40 minuta. Ocijedite, ostavite da se ohladi i sitno nasjeckajte. Sirup sačuvajte.
Naribajte koru 1 limuna i dodajte mu šećer pa dobro protrljajte prstima kako bi se oslobodio miris limuna. Toj mješavini dodajte žumanjke pa miksajte dok smjesa ne posvijetli. Dodajte mascarpone, malo limoncella i blendajte da dobijete glatku i homogenu smjesu. Istucite slatko vrhnje u šlag pa ga nježno umiješajte u smjesu s mascarponeom.
Pripremite tekućinu za namakanje kolačića tako što ćete pomiješati sok od 2 limuna, 2 žličice sirupa od limuna koji ste dobili kuhanjem i dobru dozu limoncella (prilagodite svom ukusu). U smjesu umočite kekse i slažite ih na dno kalupa. Ulijte mascarpone kremu i razmažite je špatulom. Pospite kandiranim komadićima limuna, a preko njih posložite namočene piškote. Ponavljajte postupak dok sve ne potrošite, s tim da trebate završiti slojem kreme.
Pospremite u hladnjak da se stisne barem četiri sata, a najbolje preko noći. Ukrasite kriškama i koricom limuna.
