Rujan je mjesec za spremanje zimnice, a nema dobre zimnice bez ajvara, kojem često tepaju i “balkanski kavijar”, donosi Slobodna Dalmacija.

”Kavijarom” ga nazivaju i zbog turske riječi od koje je nastao – “havyar”, što znači “usoljena, slana ikra”, pa tako te dvije riječi imaju istu etimologiju. A koliko je ove jeseni paprika skupa, ajvar će stvarno postati kao kavijar – reći će stari znalci, zaljubljenici u ajvar.

Naime, cijena paprike rog od 12 kuna za kilogram nije nikako povoljna da bi se ajvar pravio u velikim količinama.

Mnogi se nostalgično prisjećaju mirisa pečenih paprika i početka školske godine, koji se nekako poklope.

Češnjak, sol, šećer, ocat...

Prevladava mišljenje da je pravljenje ajvara kompliciran i zahtjevan posao, no onima koji ga godina prave to i nije neki problem. Samo se treba naoružati strpljenjem i s puno slobodnog vremena.

Temeljni recept za ajvar isti je kod svih, u Makedoniji, Srbiji, Hrvatskoj, Bosni. Ipak, ima i nekih razlika, “malih tajni” koje se prenose s koljena na koljeno.

Makedonci u ajvar dodaju patlidžane, Bosanci češnjak, a Srbi sol, šećer i ocat. Upravo ga zbog toga svi svojataju pa je ajvar izvor trajnih neslaganja u regiji.

Osnova za dobar ajvar je kvalitetna crvena paprika sorte rog, u nekim krajevima poznatija kao “ajvaruša”.

Paprika se najprije dobro opere i osuši. Zatim se peče, oguli i melje.

U tako samljevenu papriku dodaju se patlidžani (balancane), po želji čili papričice i sve se ponovno prži na ulju. Kako bi se dobio pravi uprženi ajvar, mora se pržiti nekoliko sati uz stalno miješanje da ne zagori. Nutricionisti kažu da ajvar spada u hranu s malo kalorija pa je pogodan za konzumaciju bez straha od debljanja i povećanja tjelesne težine.

Ajvar, balkanski kavijar, namaz od crvenih i ljutih paprika, ima kultni status. Bez obzira na to maže li se na kruh, poslužuje li se uz sir ili mesna jela, ajvar je neizostavni dio svake zimnice.

Rujan je mjesec za spremanje zimnice, a nema dobre zimnice bez ajvara, kojem često tepaju i “balkanski kavijar”, donosi Slobodna Dalmacija.

”Kavijarom” ga nazivaju i zbog turske riječi od koje je nastao – “havyar”, što znači “usoljena, slana ikra”, pa tako te dvije riječi imaju istu etimologiju. A koliko je ove jeseni paprika skupa, ajvar će stvarno postati kao kavijar – reći će stari znalci, zaljubljenici u ajvar.

Naime, cijena paprike rog od 12 kuna za kilogram nije nikako povoljna da bi se ajvar pravio u velikim količinama.

Mnogi se nostalgično prisjećaju mirisa pečenih paprika i početka školske godine, koji se nekako poklope.

Češnjak, sol, šećer, ocat...

Prevladava mišljenje da je pravljenje ajvara kompliciran i zahtjevan posao, no onima koji ga godina prave to i nije neki problem. Samo se treba naoružati strpljenjem i s puno slobodnog vremena.

Temeljni recept za ajvar isti je kod svih, u Makedoniji, Srbiji, Hrvatskoj, Bosni. Ipak, ima i nekih razlika, “malih tajni” koje se prenose s koljena na koljeno.

Makedonci u ajvar dodaju patlidžane, Bosanci češnjak, a Srbi sol, šećer i ocat. Upravo ga zbog toga svi svojataju pa je ajvar izvor trajnih neslaganja u regiji.

Osnova za dobar ajvar je kvalitetna crvena paprika sorte rog, u nekim krajevima poznatija kao “ajvaruša”.

Paprika se najprije dobro opere i osuši. Zatim se peče, oguli i melje.

U tako samljevenu papriku dodaju se patlidžani (balancane), po želji čili papričice i sve se ponovno prži na ulju. Kako bi se dobio pravi uprženi ajvar, mora se pržiti nekoliko sati uz stalno miješanje da ne zagori. Nutricionisti kažu da ajvar spada u hranu s malo kalorija pa je pogodan za konzumaciju bez straha od debljanja i povećanja tjelesne težine.

Ajvar, balkanski kavijar, namaz od crvenih i ljutih paprika, ima kultni status. Bez obzira na to maže li se na kruh, poslužuje li se uz sir ili mesna jela, ajvar je neizostavni dio svake zimnice.
