Vlasnici restorana krenuli su s pripremama za predstojeću sezonu, a jedna od mukotrpnijih svakako je pronalaženje adekvatnog kadra, ponajprije kuhara.
Ako ćemo suditi prema podacima s Hrvatskog zavoda za zapošljavanje, to ne bi trebao biti problem, barem zasad, jer je na birou registrirano 5854 nezaposlena kuhara, što uključuje pomoćne kuhare, kuhare, kuhare majstore te pečenjare. Unatoč tomu, ugostitelji će posezati za radnom snagom iz uvoza, jednostavno zato što je - jeftinija, piše Slobodna Dalmacija.
U Hrvatskoj gospodarskoj komori doznajemo da je ove godine odobreno 2200 dozvola za kuharsku radnu snagu iz inozemstva, od čega ih je 200 predviđeno za kuhare internacionalne kuhinje. Najveći broj dozvola zatraže državljani iz zemalja u okruženju RH; Bosne i Hercegovine, Srbije te Makedonije, iz koje u Hrvatsku dolaze uglavnom gril-majstori. Uz njih će u kuhinjama domaćih restorana raditi ovog ljeta i Ukrajinci, Rusi, Filipinci...
Start nakon Uskrsa
Uvoz radne snage značajnije će krenuti nakon Uskrsa, smatra naš sugovornik Mario Pavić, koji ima dugogodišnje ugostiteljsko iskustvo. Vlasnik je restorana “Mario” u šibenskoj Rogoznici te nastavnik ugostiteljske grupe predmeta u srednjoj strukovnoj školi “Blaž Jurjev Trogiranin”.
On sam nema problema s pronalaženjem osoblja zato što, kaže, čuva radnike koji su mu se pokazali dobri - dva kuhara i dva konobara zaposlio je na neodređeno vrijeme, ima dva stalna sezonca, a na još devet sezonskih radnih mjesta svake godine angažira svoje bivše učenike, danas studente, koji tijekom ljeta žele zaraditi koju kunu.

- Kolege mi se žale da domaća radna snaga postaje preskupa. Primjera radi, pomoćni radnik koji bi prao suđe traži najmanje šest do sedam tisuća kuna. Nitko me ne može uvjeriti da je to realna plaća. Kuhari su posljednjih godina svjesni da je njihovo zanimanje postalo i traženo i cijenjeno, pa postavljaju nemoguće uvjete. Prije nekog vremena mi je tako došao jedan mladac i zahtijeva plaću od 8000 kuna. Pitam ga kad je dobio diplomu, a on govori “prije dva mjeseca”... Eto, takve se situacije događaju.
Stoga ne čudi što se ugostitelji odlučuju angažirati strance koji će im raditi za manju plaću. Problem je, međutim, što ti radnici uglavnom nisu educirani, pa ih na licu mjesta moraš obučavati. Svaka čast svakom radniku, ali definitivno nije isto ako jastoga na pripremu doneseš Filipincu ili našem kuharu... Dalmatinska je kuhinja specifična s namirnicama koje kuhari iz susjednih zemalja možda nikad nisu ni vidjeli jer su uglavnom radili s mesom. Problem s kadrom ugostitelji bi mogli vrlo lako riješiti kad bi uzimali na praksu učenike od prvog razreda srednje škole, pratili ih i educirali tijekom školovanja i, na koncu, zapošljavali u svojim restoranima - govori Mario Pavić.

Alma Harašić Bremec iz ŠKMER-a (Šefovi kuhinja mediteranskih i europskih regija op.a.) potvrđuje da već godinama postoji problem s deficitom pravog kuharskog kadra, i to prvenstveno zato što je ugostiteljima problem ulagati u edukaciju svojih kuhara.

- Žale nam se i govore “ajme, otišao mi radnik”... A kako neće kad ga nakon sezone pošalje na biro! Zapošljavanja na neodređeno vrijeme u ovom su sektoru i dalje, nažalost, iznimka, pa se kuhari konstantno osjećaju kao građani drugog reda - nemaju financijsku sigurnost, mogućnost podizanja kredita i slično. Zbog manjka adekvatnog kadra značajan broj objekata ove sezone neće raditi ili će im usluga biti manjkava - kaže Alma Harašić Bremec, ističući da nam počinju dolaziti i chefovi iz zapadnih zemalja; Slovenije, Italije i Austrije.
Plaće chefova kreću se, inače, u prosjeku od 10.000 do 20.000 kuna, ovisno o uvjetima rada i ugledu restorana.
- Ako šef kuhinje može generirati dodanu vrijednost, onda su takve plaće opravdane. Kuhari početnici imaju, prema našim saznanjima, primanja od 6000 do 8000 kuna. Za početak bi se, naravno, time trebali zadovoljiti, a od poslodavca obavezno tražiti i jedan slobodan dan u tjednu. To je najvažnije - smatraju u ŠKMER-u, piše Slobodna Dalmacija.

Vlasnici restorana krenuli su s pripremama za predstojeću sezonu, a jedna od mukotrpnijih svakako je pronalaženje adekvatnog kadra, ponajprije kuhara.
Ako ćemo suditi prema podacima s Hrvatskog zavoda za zapošljavanje, to ne bi trebao biti problem, barem zasad, jer je na birou registrirano 5854 nezaposlena kuhara, što uključuje pomoćne kuhare, kuhare, kuhare majstore te pečenjare. Unatoč tomu, ugostitelji će posezati za radnom snagom iz uvoza, jednostavno zato što je - jeftinija, piše Slobodna Dalmacija.
U Hrvatskoj gospodarskoj komori doznajemo da je ove godine odobreno 2200 dozvola za kuharsku radnu snagu iz inozemstva, od čega ih je 200 predviđeno za kuhare internacionalne kuhinje. Najveći broj dozvola zatraže državljani iz zemalja u okruženju RH; Bosne i Hercegovine, Srbije te Makedonije, iz koje u Hrvatsku dolaze uglavnom gril-majstori. Uz njih će u kuhinjama domaćih restorana raditi ovog ljeta i Ukrajinci, Rusi, Filipinci...
Start nakon Uskrsa
Uvoz radne snage značajnije će krenuti nakon Uskrsa, smatra naš sugovornik Mario Pavić, koji ima dugogodišnje ugostiteljsko iskustvo. Vlasnik je restorana “Mario” u šibenskoj Rogoznici te nastavnik ugostiteljske grupe predmeta u srednjoj strukovnoj školi “Blaž Jurjev Trogiranin”.
On sam nema problema s pronalaženjem osoblja zato što, kaže, čuva radnike koji su mu se pokazali dobri - dva kuhara i dva konobara zaposlio je na neodređeno vrijeme, ima dva stalna sezonca, a na još devet sezonskih radnih mjesta svake godine angažira svoje bivše učenike, danas studente, koji tijekom ljeta žele zaraditi koju kunu.

- Kolege mi se žale da domaća radna snaga postaje preskupa. Primjera radi, pomoćni radnik koji bi prao suđe traži najmanje šest do sedam tisuća kuna. Nitko me ne može uvjeriti da je to realna plaća. Kuhari su posljednjih godina svjesni da je njihovo zanimanje postalo i traženo i cijenjeno, pa postavljaju nemoguće uvjete. Prije nekog vremena mi je tako došao jedan mladac i zahtijeva plaću od 8000 kuna. Pitam ga kad je dobio diplomu, a on govori “prije dva mjeseca”... Eto, takve se situacije događaju.
Stoga ne čudi što se ugostitelji odlučuju angažirati strance koji će im raditi za manju plaću. Problem je, međutim, što ti radnici uglavnom nisu educirani, pa ih na licu mjesta moraš obučavati. Svaka čast svakom radniku, ali definitivno nije isto ako jastoga na pripremu doneseš Filipincu ili našem kuharu... Dalmatinska je kuhinja specifična s namirnicama koje kuhari iz susjednih zemalja možda nikad nisu ni vidjeli jer su uglavnom radili s mesom. Problem s kadrom ugostitelji bi mogli vrlo lako riješiti kad bi uzimali na praksu učenike od prvog razreda srednje škole, pratili ih i educirali tijekom školovanja i, na koncu, zapošljavali u svojim restoranima - govori Mario Pavić.

Alma Harašić Bremec iz ŠKMER-a (Šefovi kuhinja mediteranskih i europskih regija op.a.) potvrđuje da već godinama postoji problem s deficitom pravog kuharskog kadra, i to prvenstveno zato što je ugostiteljima problem ulagati u edukaciju svojih kuhara.

Zapošljavanja na neodređeno vrijeme u ovom su sektoru i dalje, nažalost, iznimka, pa se kuhari konstantno osjećaju kao građani drugog reda - nemaju financijsku sigurnost, mogućnost podizanja kredita i slično. Zbog manjka adekvatnog kadra značajan broj objekata ove sezone neće raditi ili će im usluga biti manjkava - kaže Alma Harašić Bremec, ističući da nam počinju dolaziti i chefovi iz zapadnih zemalja; Slovenije, Italije i Austrije.
Plaće chefova kreću se, inače, u prosjeku od 10.000 do 20.000 kuna, ovisno o uvjetima rada i ugledu restorana.
- Ako šef kuhinje može generirati dodanu vrijednost, onda su takve plaće opravdane. Kuhari početnici imaju, prema našim saznanjima, primanja od 6000 do 8000 kuna. Za početak bi se, naravno, time trebali zadovoljiti, a od poslodavca obavezno tražiti i jedan slobodan dan u tjednu. To je najvažnije - smatraju u ŠKMER-u, piše Slobodna Dalmacija.
