Raštika je poznata namirnica u većini domaćinstava u Primorju, Dalmaciji i Hercegovini, no sada je dio ponude većine tržnica u cijeloj zemlji. Uzgojena je kao i sve druge vrste od divljeg kupusa, a draži joj je kamen od zemlje crnice. Jela se već u vrijeme drevnog Egipta, bila je cijenjena na stolovima antičkih Grka i Rimljana, a na našoj strani Jadrana počela se uzgajati početkom 4. stoljeća. Sjetva je kraljem veljače ili početkom ožujka, a sadi se u travnju, piše Dobra hrana
Ova zelen, lako se uzgaja i izvrsno podnosi sve vremenske uvjete, od suše do mraza, zato ju možemo pronaći čitave godine. U razdoblju suše zaustavlja rast, a listovi joj postaju tvrdi i kožasti, ali odmah nakon kiše razvije novo, kvalitetno lišće. Mnogi kažu da je najukusnija ipak zimi, nakon prvog mraza, jer je mekša i slađa. Slatko-gorkastog je okusa, ima je u svim nijansama zelene, ali može biti i crvena, ljubičasta pa i crna. Puno je zdravih razloga zbog kojih vrijedi barem jednom tjedno doći doma s raštikom - bogata je vitaminima, osobito vitaminom A kojeg sadrži četiri puta više od brokule, šest puta više od graška i 40 puta više od celera. Sadrži i sve vitamine iz B skupine, a i velike količine vitamina C. Antioksidansi iz raštike sudjeluju u prevenciji različitih vrsta tumora i srčanih bolesti.
U početku je to bila obična raštika, spravljena kao varivo sa suhim ili svježim mesom, a sada se od nje pripremaju razna jela, tjestenine, napitci, kolači, peciva i drugi specijaliteti. Kao i ostalo lisnato povrće, najbolja je kuhana na pari ili u što više vode jer dio njene gorčine odlazi u istu. Ponekad zahtijeva malo dulje kuhanje, ali to ovisi o starosti njenih listova. Donosimo vam recept za varivo s raštikom koje će vas okrijepiti:
VARIVO OD RAŠTIKE
Trebat će vam:
1 vezica raštike (oko 500 grama)
400 g slanutka
1 luk
1 žličica mljevene crvene paprike
2 češnja češnjaka
2 žlice pasirane rajčice
maslinovo ulje
Priprema:
Slanutak namočite preko noći - što ga dulje močite, kraće će se kuhati. Poželjno je da slanutak skuhate zasebno, ali ne do kraja jer ako ga stavite kuhati zajedno s raštikom, ona će se prekuhati, samim time postati gorka, a izgubit će se sve svoje blagodati. Prvi korak možete preskočiti koristeći slanutak iz konzerve, no onda ih ipak možete kuhati zajedno. Na maslinovu ulju popržite nasjeckani luk, dodajte mljevenu papriku, prodinstajte pa dodajte slanutak, pasiranu rajčicu i narezanu raštiku. Ulijte vode po želji, odnosno koliko želite da varivo bude gusto. Kuhajte na laganoj vatri, a pretkraj dodajte nasjeckani češnjak. Na samom kraju posolite, popaprite i po želji pokapajte s još malo maslinova ulja.

Raštika je poznata namirnica u većini domaćinstava u Primorju, Dalmaciji i Hercegovini, no sada je dio ponude većine tržnica u cijeloj zemlji. Uzgojena je kao i sve druge vrste od divljeg kupusa, a draži joj je kamen od zemlje crnice. Jela se već u vrijeme drevnog Egipta, bila je cijenjena na stolovima antičkih Grka i Rimljana, a na našoj strani Jadrana počela se uzgajati početkom 4. stoljeća. Sjetva je kraljem veljače ili početkom ožujka, a sadi se u travnju, piše Dobra hrana
Ova zelen, lako se uzgaja i izvrsno podnosi sve vremenske uvjete, od suše do mraza, zato ju možemo pronaći čitave godine. U razdoblju suše zaustavlja rast, a listovi joj postaju tvrdi i kožasti, ali odmah nakon kiše razvije novo, kvalitetno lišće. Mnogi kažu da je najukusnija ipak zimi, nakon prvog mraza, jer je mekša i slađa. Slatko-gorkastog je okusa, ima je u svim nijansama zelene, ali može biti i crvena, ljubičasta pa i crna. Puno je zdravih razloga zbog kojih vrijedi barem jednom tjedno doći doma s raštikom - bogata je vitaminima, osobito vitaminom A kojeg sadrži četiri puta više od brokule, šest puta više od graška i 40 puta više od celera. Sadrži i sve vitamine iz B skupine, a i velike količine vitamina C. Antioksidansi iz raštike sudjeluju u prevenciji različitih vrsta tumora i srčanih bolesti.
U početku je to bila obična raštika, spravljena kao varivo sa suhim ili svježim mesom, a sada se od nje pripremaju razna jela, tjestenine, napitci, kolači, peciva i drugi specijaliteti. Kao i ostalo lisnato povrće, najbolja je kuhana na pari ili u što više vode jer dio njene gorčine odlazi u istu. Ponekad zahtijeva malo dulje kuhanje, ali to ovisi o starosti njenih listova. Donosimo vam recept za varivo s raštikom koje će vas okrijepiti:
VARIVO OD RAŠTIKE
Trebat će vam:
1 vezica raštike (oko 500 grama)
400 g slanutka
1 luk
1 žličica mljevene crvene paprike
2 češnja češnjaka
2 žlice pasirane rajčice
maslinovo ulje
Priprema:
Slanutak namočite preko noći - što ga dulje močite, kraće će se kuhati. Poželjno je da slanutak skuhate zasebno, ali ne do kraja jer ako ga stavite kuhati zajedno s raštikom, ona će se prekuhati, samim time postati gorka, a izgubit će se sve svoje blagodati. Prvi korak možete preskočiti koristeći slanutak iz konzerve, no onda ih ipak možete kuhati zajedno. Na maslinovu ulju popržite nasjeckani luk, dodajte mljevenu papriku, prodinstajte pa dodajte slanutak, pasiranu rajčicu i narezanu raštiku. Ulijte vode po želji, odnosno koliko želite da varivo bude gusto. Kuhajte na laganoj vatri, a pretkraj dodajte nasjeckani češnjak. Na samom kraju posolite, popaprite i po želji pokapajte s još malo maslinova ulja.
