Posljednjih dana traje pomalo bizarna rasprava o tome što točno ide u francusku salatu. Sporne su jabuke, po nekima i šunka, no sve nam se čini da malo tko od umiješanih u raspravu zapravo zna o čemu govori. Ponajprije se miješaju francuska i ruska salata, a čak je i sam naziv, francuska, poprilično pogrešan.

Pitate li Francuze za francusku salatu, tko zna što bi vam mogli ponuditi, a počnete li im opisivati što točno želite, vjerojatno bi vam donijeli salatu koju oni nazivaju - makedonskom. Macédonie je termin koji se koristi za mješavinu povrća narezanog na kockice, no također i naziv salate od graška, mrkve, na kockice narezane repe i bogatog umaka na bazi majoneze. Isti se tremin koristi i za još jedno toplo jelo od povrća, no nećemo sad bespotrebno komplicirati.

Što se francuske salate tiče, za pretpostaviti je da je riječ o podvrsti gore spomenute salate, no jednako bi tako mogla biti i podvrsta ruske. Da zabuna bude još veća, rusku je osmislio kuhar čije ime zvuči francuski, Lucien Olivier. No chef Olivier nije Francuz nego Rus belgijskih korijena.

Recept je nastao u Moskvi 1860. godine i to u poznatom restoranu Hermitage, gdje ju je Olivier pripremio u tajnosti. Službeno, salata se zove Olivierova salata, premda je neki nazivaju ruskom, a što se tiče izvornog recepta iz 1860., taj podrazumijeva teleći jezik, kavijar, zelenu salatu, jastoga, kapare, krastavce, tvrdo kuhana jaja i zrna soje.

Danas se u rusku salatu u pravilu stavljaju grašak, mrkvu, majonezu i šunku narezanu na kockice, dok neki vole dodati i jabuku za osvježavajući dojam. Napomenimo i da se poznata poljska Sałatka jarzynowa (pisali smo vam već o njoj) radi od navedenih sastojaka, uz dodatak haringi. Eto, zbrka postaje sve gora.

Jabuka, pak, nije na popisu uobičajenih sastojaka za francusku salatu, ali nije ni šunka, kao ni sir kojega mnogi vole staviti. Krumpir, koji mnogi vole dodati grašku i mrkvi, međutim, po pravilima ne ide ni u francusku ni u rusku. Ali ide u poljsku.

Posljednjih dana traje pomalo bizarna rasprava o tome što točno ide u francusku salatu. Sporne su jabuke, po nekima i šunka, no sve nam se čini da malo tko od umiješanih u raspravu zapravo zna o čemu govori. Ponajprije se miješaju francuska i ruska salata, a čak je i sam naziv, francuska, poprilično pogrešan.

Pitate li Francuze za francusku salatu, tko zna što bi vam mogli ponuditi, a počnete li im opisivati što točno želite, vjerojatno bi vam donijeli salatu koju oni nazivaju - makedonskom. Macédonie je termin koji se koristi za mješavinu povrća narezanog na kockice, no također i naziv salate od graška, mrkve, na kockice narezane repe i bogatog umaka na bazi majoneze. Isti se tremin koristi i za još jedno toplo jelo od povrća, no nećemo sad bespotrebno komplicirati.

Što se francuske salate tiče, za pretpostaviti je da je riječ o podvrsti gore spomenute salate, no jednako bi tako mogla biti i podvrsta ruske. Da zabuna bude još veća, rusku je osmislio kuhar čije ime zvuči francuski, Lucien Olivier. No chef Olivier nije Francuz nego Rus belgijskih korijena.

Recept je nastao u Moskvi 1860. godine i to u poznatom restoranu Hermitage, gdje ju je Olivier pripremio u tajnosti. Službeno, salata se zove Olivierova salata, premda je neki nazivaju ruskom, a što se tiče izvornog recepta iz 1860., taj podrazumijeva teleći jezik, kavijar, zelenu salatu, jastoga, kapare, krastavce, tvrdo kuhana jaja i zrna soje.

Danas se u rusku salatu u pravilu stavljaju grašak, mrkvu, majonezu i šunku narezanu na kockice, dok neki vole dodati i jabuku za osvježavajući dojam. Napomenimo i da se poznata poljska Sałatka jarzynowa (pisali smo vam već o njoj) radi od navedenih sastojaka, uz dodatak haringi. Eto, zbrka postaje sve gora.

Posljednjih dana traje pomalo bizarna rasprava o tome što točno ide u francusku salatu. Sporne su jabuke, po nekima i šunka, no sve nam se čini da malo tko od umiješanih u raspravu zapravo zna o čemu govori. Ponajprije se miješaju francuska i ruska salata, a čak je i sam naziv, francuska, poprilično pogrešan.

Pitate li Francuze za francusku salatu, tko zna što bi vam mogli ponuditi, a počnete li im opisivati što točno želite, vjerojatno bi vam donijeli salatu koju oni nazivaju - makedonskom. Macédonie je termin koji se koristi za mješavinu povrća narezanog na kockice, no također i naziv salate od graška, mrkve, na kockice narezane repe i bogatog umaka na bazi majoneze. Isti se tremin koristi i za još jedno toplo jelo od povrća, no nećemo sad bespotrebno komplicirati.

Što se francuske salate tiče, za pretpostaviti je da je riječ o podvrsti gore spomenute salate, no jednako bi tako mogla biti i podvrsta ruske. Da zabuna bude još veća, rusku je osmislio kuhar čije ime zvuči francuski, Lucien Olivier. No chef Olivier nije Francuz nego Rus belgijskih korijena.

Recept je nastao u Moskvi 1860. godine i to u poznatom restoranu Hermitage, gdje ju je Olivier pripremio u tajnosti. Službeno, salata se zove Olivierova salata, premda je neki nazivaju ruskom, a što se tiče izvornog recepta iz 1860., taj podrazumijeva teleći jezik, kavijar, zelenu salatu, jastoga, kapare, krastavce, tvrdo kuhana jaja i zrna soje.

Danas se u rusku salatu u pravilu stavljaju grašak, mrkvu, majonezu i šunku narezanu na kockice, dok neki vole dodati i jabuku za osvježavajući dojam. Napomenimo i da se poznata poljska Sałatka jarzynowa (pisali smo vam već o njoj) radi od navedenih sastojaka, uz dodatak haringi. Eto, zbrka postaje sve gora.
